I’ve been enjoying making single-serving desserts lately. They satisfy a sweet craving without committing to an entire pan, and they’re especially handy when you want something warm and comforting. With fall approaching, apples felt like the perfect choice, so I made this Apple Crisp For One. It’s simple, tasty, and can be shared—if you want to.

This single-serving apple crisp is easy enough for a weeknight treat and comforting enough for a cozy weekend dessert. It’s naturally portion-controlled, and while the microwave method won’t produce a crunchy topping like baking does, the flavors are the same and it’s ready in about a minute or two.

Apple Crisp For One
Ingredients
- 1 (206 g) large Granny Smith apple
- 2 Tbsp (25 g) brown sugar, divided
- 2 Tbsp (20 g) quick oats, divided
- 1 ½ Tbsp (12 g) all-purpose flour, divided
- ¼ tsp ground cinnamon, divided
- 1 tsp lemon juice
- 1 Tbsp (14 g) butter

Peel and thinly slice the apple. In a bowl, toss the slices with 1 Tbsp brown sugar, ½ Tbsp quick oats, ½ Tbsp flour, ⅛ tsp cinnamon and 1 tsp lemon juice. Place the mixture into a microwave-safe dish or ramekin.

Prepare the crumb topping by combining the remaining ingredients: 1 Tbsp brown sugar, 1½ Tbsp quick oats, 1 Tbsp flour, ⅛ tsp cinnamon and 1 Tbsp butter. Use a fork to mix until crumbly, then sprinkle the topping evenly over the apples.

Microwave on high for 60 to 90 seconds, until the apples are tender. Alternatively, bake at 375°F for 30–35 minutes for a crispier topping. Serve warm, optionally with a small scoop of vanilla ice cream.
