Apple Cinnamon Baked Oatmeal – old fashioned oats, agave, and apples combine for a lighter, flavorful baked oatmeal.

I finally tried baked oatmeal and loved how simple and quick it was to put together. It’s an easy, comforting dish that works for breakfast, brunch, or even dinner.

We served ours for dinner and the kids loved it—there were plenty of “Mmm!” and “Yummy!” moments, and even requests for seconds.

A crunchy granola topping contrasts nicely with the soft baked base. Apples and cinnamon are classic together, but you could swap in canned sliced peaches in juice if you prefer.

This version is lightened with agave and egg whites, though we still drizzled a bit of maple syrup on top. It was delicious hot from the oven—enjoy!

Apple Cinnamon Baked Oatmeal
Ingredients
Oatmeal:
- 2 cups (160 g) old fashioned oats
- 2 Tbsp agave or honey
- 2 Tbsp Splenda brown sugar or light brown sugar
- 4 egg whites
- ½ tsp baking powder
- 2 apples, diced small (skin on or off)
- 2 cups (473 ml) water
- 1 Tbsp ground cinnamon
Topping:
- ½ cup (44 g) low-fat granola
- 2 Tbsp light brown sugar
Instructions
- Combine all oatmeal ingredients in a bowl until well mixed. Pour the mixture into a greased 9×13-inch baking dish.
- Bake at 350°F (175°C) for 30 minutes, or until the oatmeal is set and lightly golden around the edges.
- Sprinkle the top evenly with granola and light brown sugar, then place under the broiler for about 1 minute to crisp the topping. Serve hot in slices and add a little maple syrup if desired.
Notes
Swap apples for a can of sliced peaches in juice if you prefer. For a richer version, use whole eggs or add a splash of milk. Adjust sweeteners to taste.
