Why You Should Make This Recipe

  • Simple and Fast: Minimal ingredients and easy prep make these bars approachable for any baker. The results look and taste like you spent much more time than you did.
  • Two Delightful Layers: The contrast of a sturdy brownie base and a sweet, chewy coconut-pecan topping gives each bite great texture and flavor.
  • Gourmet Upgrade: This recipe turns a boxed brownie mix into an elevated treat. The brownie layer holds up to the topping while remaining moist and cake-like. If you prefer scratch-made brownies, you can substitute a homemade brownie recipe.

German Chocolate Bars

These bars are inspired by classic German Chocolate Cake, known for its moist chocolate layers and the signature coconut-pecan frosting. The topping is made from shredded coconut and chopped pecans suspended in a sweet, sticky base so you get that familiar flavor without frosting a whole cake.

Instead of a separate chocolate buttercream, this version bakes the coconut-pecan mixture on top of a fudgy brownie crust, similar in spirit to seven-layer bars. The result is rich, chewy, and addictive—especially welcome for coconut lovers.

We shared these with neighbors who said they reminded them of Almond Joy or Mounds candy bars. My family loved them, and my daughter asked for seconds. If you enjoy coconut and chocolate together, these are for you.

Labeled ingredients to make German Chocolate Bars.
  • Brownie mix – A chewy fudge brownie mix works well; use your preferred brand or swap for homemade brownie batter.
  • Eggs, water, oil – As directed on the brownie mix box; you’ll also need one extra egg for the topping.
  • Sweetened condensed milk – Binds the topping and creates a sticky, caramel-like texture (regular or fat-free).
  • Vanilla extract – Enhances the topping’s flavor.
  • Sweetened coconut flakes – Provide the chewy coconut texture central to the topping.
  • Chopped pecans – Add crunch and nuttiness; toasting them first brings out more flavor.
  • Chocolate chips – Semi-sweet or your favorite chocolate chips finish the topping.

This comes together quickly, so toast the pecans first if you plan to. Toasting concentrates nut flavor—watch them closely so they don’t burn.

Toasting chopped pecans in a skillet.
  • Toast pecans in a dry skillet over medium heat, stirring often, until golden and fragrant, about 2–5 minutes. Remove immediately to a cool plate to stop cooking and chop once cooled.
  • Preheat oven to 350°F (175°C). Lightly grease a 13×9-inch pan or line it with parchment, leaving an overhang to lift the bars out later.
  • Make the brownie batter according to box directions (or prepare your homemade batter). Spread evenly in the prepared pan and bake 10 minutes—don’t expect it to be fully set; edges should just begin to firm.

Make the Coconut Pecan Topping

While the brownie base is in the oven, prepare the topping.

Making coconut pecan topping.
  • Whisk together sweetened condensed milk, vanilla, and one egg until smooth.
  • Fold in shredded coconut and chopped pecans until evenly combined.

Assemble the Layers

Steps to make German Chocolate Bars, with a brownie crust, coconut pecan topping, and chocolate chips, all baked until golden.
  1. After the brownie layer has baked the initial 10 minutes, remove the pan from the oven.
  2. Drop spoonfuls of the coconut-pecan mixture over the brownie; distribute as evenly as possible. (Do not pour the topping—dropping spoonfuls keeps it spreadable and prevents it from sinking too far.)
  3. Sprinkle chocolate chips across the topping.
  4. Return to the oven and bake another 25–30 minutes, until edges are golden and a toothpick inserted near the center comes out mostly clean. My batch took about 27–28 minutes.

Serving and Storing

  • Let the bars cool completely before cutting so the topping sets.
  • Cut into 15 pieces (3 by 5 grid). If you used parchment, lift the slab from the pan using the overhang and slice on a cutting board.
  • Store leftovers tightly covered in the pan with plastic wrap or foil, or transfer to an airtight container.
  • Keep at room temperature for 3–4 days.
