Summer is here, and with kids out of school we’re diving into all the season’s perks—sunny days, pools, splash pads and, of course, fairs. Favorite fair foods are always a hit at our house, and Navajo Tacos (Indian Fry Bread topped like a taco) rank near the top. Crisp, golden fry bread topped with seasoned meat and beans, shredded lettuce, tomatoes, olives, cheese and a dollop of sour cream—what’s not to love?

I usually keep things simple when I can, so I skipped making dough from scratch and used thawed Rhodes Texas Rolls instead. They flatten to the perfect size for fry bread, which makes this meal come together fast—great for busy weeknights or to add to a summer rotation. Leftover fry bread reheats well on toast or in a toaster oven to regain crispness. For a sweet finish, try topping a warm piece with honey butter.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • ½ tsp minced garlic
  • 1 oz packet taco seasoning
  • ⅓ cup water
  • 15.5 oz can chili beans with sauce
  • Vegetable or canola oil for frying
  • 6 Rhodes Texas Rolls, thawed
  • Shredded lettuce, for topping
  • Diced tomato, for topping
  • Sliced olives, for topping
  • Shredded cheddar cheese, for topping
  • Sour cream, for serving

Instructions

  • Brown the ground beef with the chopped onion and minced garlic. Drain excess fat, return the beef to the pan, then stir in the taco seasoning and water. Add the can of chili beans with sauce and simmer for about 5 minutes to blend flavors. Keep covered and warm.
  • Heat oil to 375°F (190°C). Flatten each thawed roll into a 6-inch circle. Fry 1–2 at a time until golden brown, about 30–60 seconds per side, turning once. Drain on paper towels to remove excess oil.
  • Top each piece of fry bread with the warm meat and bean mixture, then add shredded lettuce, diced tomato, sliced olives, shredded cheddar and a dollop of sour cream. Serve immediately and enjoy.
