Ingredients

  • 18 Rhodes White Dinner Rolls, thawed, but still cold
  • 1 small box instant vanilla pudding mix (approximately 3 oz / 85 g)
  • ½ cup (85 g) white chocolate chips
  • ½ to ¾ pound (227-341 g) strawberries, rinsed, hulled and sliced (an egg slicer works great for this!)
  • ½ cup (100 g) granulated sugar
  • ½ cup (113 g) butter (1 stick)

Instructions

  1. Prepare a bundt pan with baking spray. Place vanilla pudding mix in a small bowl. Cut thawed Rhodes rolls into fourths and coat each piece thoroughly in the vanilla pudding mix. Stagger the coated rolls inside the bundt pan.
  2. Alternately add slices of strawberries and white chocolate chips throughout the layers in the bundt pan. Once all the rolls, strawberries, and chocolate chips have been layered, sprinkle any remaining pudding mix on top of the monkey bread.
  3. In a microwave-safe bowl, heat the granulated sugar and butter for 1½ to 2 minutes or until the sugar dissolves and the mixture becomes syrupy. Pour this warm syrup around the edges and over the top of the monkey bread in the bundt pan.
  4. Lightly spray a piece of plastic wrap with baking spray and use it to cover the pan. Set the pan in a warm place and allow the rolls to double in size, almost reaching the top of the pan. (For overnight prep, refrigerate after covering. Remove from fridge 1 hour before baking to finish rising).
  5. Preheat oven to 350˚F (175˚C). Bake for 25-35 minutes, or until the bread is browned and cooked through where the pieces touch each other.
  6. IMPORTANT: Place a baking sheet on the shelf underneath the bundt pan to catch any potential spills. If the bread starts to get too brown during the last 10 minutes of baking, cover it loosely with foil. Immediately after baking, carefully invert the monkey bread onto a serving plate. Serve warm. Refrigerate any leftovers.
