I used frozen blueberries for convenience — they’re something I always have on hand — but fresh berries work just as well. Either way, the flavor is bright and summery.

If you follow my recipes, you know I love lime. The touch of lime zest and juice pairs beautifully with the blueberries, adding a subtle citrus note that lifts the whole dessert. Served in individual cups, these are fun for kids and adults alike and disappear quickly once plated.

Blueberry Lime No-Bake Cheesecake Cups

No-bake cheesecakes are one of my favorites because chilling gives them a light, airy consistency that’s smooth and satisfying. This blueberry-lime variation balances fruity sweetness with a hint of citrus — perfect for a hot day.

5 (5oz) cups

Ingredients

  • 5 graham crackers
  • ½ Tbsp granulated sugar
  • 3 Tbsp (42 g) butter, melted
  • 8 oz (226 g) Neufchatel cream cheese
  • 8 oz (226 g) tub light cool whip
  • ⅓ cup (40 g) powdered sugar
  • zest of 1 lime
  • 1 Tbsp lime juice
  • ½ cup (140 g) frozen or fresh blueberries, roughly chopped

Instructions

  • Crush graham crackers in a food processor until they form fine crumbs. Stir in the granulated sugar and melted butter until the crumbs are evenly moistened. Press the mixture into the bottoms of five 5-ounce cups to form the crust.
  • In a medium bowl, beat the Neufchatel cream cheese, light Cool Whip, powdered sugar, lime zest, and lime juice with a handheld mixer until smooth and combined. Fold in the chopped blueberries. Transfer the filling to a plastic bag, snip off one corner, and pipe or squeeze the mixture onto the crusts in each cup. Top with extra blueberries, cover with plastic wrap, and refrigerate for a few hours or overnight to set. If eaten immediately, the texture will be more like a blueberry-lime yogurt; chilling yields the classic puffy no-bake cheesecake texture. Store refrigerated up to 7 days.
