Ingredients

  • 2 large chicken breasts, cut in half to make 4 pieces
  • 4 slices pepper jack cheese
  • 1 packed cup of spinach, chiffonade or roughly chopped
  • 2 Tbsp Cajun seasoning
  • 1 Tbsp breadcrumbs (Italian style recommended)
  • 1 Tbsp grated Parmesan cheese
  • Canola oil (for brushing or spraying)
  • Salt & pepper

Instructions

 

  • Preheat the oven to 350°F (175°C).
  • Pound each chicken piece to about 1/4–1/2 inch thickness. Season both sides with salt and pepper.
  • Place a slice of pepper jack cheese on each flattened breast, add some chopped spinach, then roll the chicken and place seam-side down on a greased baking sheet. Lining the sheet with foil makes cleanup easier.
  • In a small bowl, mix the Cajun seasoning, breadcrumbs, and Parmesan. Brush or lightly spray the tops of the rolled chicken with canola oil, then sprinkle the seasoning mixture over each roll to coat. Discard any remaining mixture.
  • Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C). Let rest briefly, then serve and enjoy.
