Using a quality frozen dough—either the thaw-and-rise style or the AnyTime® rolls that skip thawing—gives you tender, bakery-style cinnamon rolls with minimal effort. If you prefer to bake entirely from scratch, you can substitute your favorite homemade cinnamon roll dough and follow the same caramel-pecan finish.

Easy Caramel Pecan Rolls

This recipe yields a pan of 12 caramel pecan rolls. The process is simple: make a quick stovetop caramel, spread it in a 9×13-inch pan, top with chopped pecans, then nestle the frozen cinnamon rolls on top to rise and bake.

The caramel is made with butter, light brown sugar, light corn syrup, heavy cream, vanilla, and a pinch of salt. It comes together on the stovetop in minutes—no candy thermometer required. Pour the hot caramel into the pan, add the pecans, then arrange the cinnamon rolls in a 3×4 grid.

Toasting the pecans briefly in a dry skillet brings out their flavor, but it’s optional. Cover the pan with lightly greased plastic wrap and allow the rolls to rise until doubled in size—about 2–3 hours at room temperature, depending on how warm your kitchen is. If you’re short on time, use ready-to-bake rolls that don’t need thawing.

Bake at 350°F until the rolls are a deep golden brown and fully cooked through—the internal temperature of the dough should register about 190–200°F. The richer color enhances the caramel flavor and gives you that irresistible sticky top.

When the pan comes out of the oven, invert it immediately and carefully onto a serving platter so the caramel and pecans coat the tops of the rolls. If you don’t have a large platter, place a sheet of parchment paper over a cooling rack and flip the pan onto it for stability.

Make Ahead Overnight

These rolls are ideal for making ahead. Assemble them as directed, then cover and refrigerate overnight. They will thaw and rise slowly in the fridge, so you can bake them the next morning with minimal prep. If needed, let them finish rising at room temperature before baking.

Prep: 15 mins
Cook: 35 mins
Rise Time 2 hrs
Total: 2 hrs 50 mins
Sticky, gooey caramel pecan rolls made easy with frozen cinnamon rolls and a quick homemade caramel.
Yields 12 servings

Ingredients

  • 1 1/4 cups (140 g) pecans, chopped
  • 1/2 cup (113 g) butter (1 stick)
  • 1 cup (200 g) light brown sugar, gently packed
  • 1/4 cup (59 ml) light corn syrup
  • 1/4 cup (59 ml) heavy cream
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 12 Rhodes Frozen Cinnamon Rolls (or your preferred frozen cinnamon rolls)

Equipment

  • 13×9-inch pan
  • Parchment paper or a large serving platter for flipping
  • Cooling rack

Instructions

  • Chop the pecans. If you like, toast them in a dry skillet over medium heat for 3–5 minutes until fragrant. Transfer to a heat-safe bowl and set aside.
  • In a medium saucepan over medium heat, melt the butter. Add the brown sugar and corn syrup, stirring until the sugar dissolves and the mixture is smooth. Remove from heat and carefully stir in the heavy cream, vanilla, and salt. It may bubble up—use caution.
  • Pour the caramel evenly into a 13×9-inch baking pan, then sprinkle the chopped pecans over the caramel. Arrange the frozen cinnamon rolls on top in a 3×4 grid. Cover the pan with plastic wrap lightly sprayed with cooking spray.
  • Let the rolls rise at room temperature until doubled in size, about 2–3 hours depending on kitchen temperature. For a make-ahead option, refrigerate overnight to thaw and rise slowly.
  • Preheat the oven to 350°F. Remove the plastic wrap and bake the rolls for 30–40 minutes, until the tops are deep golden brown and the center dough reaches 190–200°F.
  • Immediately and carefully invert the pan onto a serving plate or parchment-lined cooling rack so the caramel and pecans are on top. Serve warm.

Notes

*To bake immediately: use rolls that don’t require thawing if you want to skip the rise time.

*Make ahead/overnight: assemble through step 3, then refrigerate overnight. Remove and allow any additional rising at room temperature before baking.

*Store leftovers in an airtight container at room temperature. Reheat individual rolls for about 15 seconds in the microwave.
