Caribbean Slush Cocktail Recipe: Tropical Frozen Drink Guide

Beat the summer heat with this bright, fruity Caribbean Slush. It’s a non-alcoholic, family-friendly drink that layers tropical flavors — pineapple juice and cream of coconut — with banana and lemonade for a sweet-tart balance. Sparkling pineapple-coconut water and crushed ice make it icy and refreshing, perfect for hot afternoons or poolside gatherings.

This easy drink is great for both kids and adults. We loved it so much we made it more than once — and it’s simple enough to repeat whenever you want a cool, tropical treat. Serve immediately for the best slush texture.

Ingredients

  • 2 cups cold pineapple juice
  • 1 cup cream of coconut or lite cream of coconut (not coconut milk; Coco Lopez is a common brand)
  • 6 Tbsp Country Time Lemonade dry drink mix
  • 2 frozen bananas (freeze peeled bananas ahead of time, whole or sliced)
  • 4-5 cups ice
  • 1 cup pineapple coconut sparkling water

Instructions

  • In a blender, combine half of the pineapple juice, half of the cream of coconut, half of the lemonade mix, one frozen banana, and half the ice. Blend until the ice and banana are fully pureed. Add half of the sparkling water and pulse briefly to incorporate.
  • Repeat the process with the remaining ingredients to make a second batch. Pour both batches into serving cups and serve immediately for the best slush consistency.
