Cheesy Tater-Tot Casserole with Ground Beef and Veggies

I have a soft spot for simple, comforting meals, and this tater tot casserole is one of my favorites. Even with culinary training, sometimes the most unpretentious dishes are the most satisfying — creamy, hearty, and easy to make.

The casserole isn’t the fanciest-looking dish, but it’s rich, creamy, and comforting. Who can resist tater tots? A friend shared this recipe years ago and I’ve adjusted it slightly to suit our family’s tastes. It’s versatile, kid-friendly, and perfect for busy weeknights.

Ingredients

  • ½ lb to 1 lb ground turkey or ground beef
  • 1 Tbsp Weber Chicago Steak Seasoning (or preferred seasoning)
  • Salt & Pepper, to taste
  • 1 Tbsp Dehydrated onion flakes
  • ½ (32 oz) bag of tator tots
  • 1 Can cream of chicken soup (or cream of mushroom if using ground beef)
  • ¾ Can of milk (use the cream soup can to measure)
  • 1 Can of corn, drained
  • Green onions, chopped (optional)
  • Shredded cheese (Colby Jack recommended)

Instructions

  • Brown the meat with the seasoning and onion flakes. If using ground beef, drain excess fat. Spray the inside of a crockpot (or an 8×8 baking dish if using the oven) with cooking spray. Layer half the tater tots, then evenly add the cooked meat.
  • In a bowl, combine the cream soup, milk (measured in the soup can), drained corn, and chopped green onions if using. Stir until smooth and pour over the meat and tater tots.
  • Top the casserole with shredded cheese, cover, and cook on low in the crockpot for 3–4 hours, or until heated through and the cheese is melted.
  • Oven method: bake in a 350°F oven in an 8×8 dish covered with foil for 30–45 minutes, until the casserole is bubbling. Remove the foil for the last 5–10 minutes to brown the cheese.

Notes

  • Tip: If you cook 1 lb of meat, you can freeze half with the remaining tater tots for an easy future meal.
  • This dish is highly adaptable. Change the meat, cream soup, vegetables, or seasonings to suit your preferences — for example, add Cajun seasoning for a spicy variation. It’s a reliable, comforting family meal.
