Ingredients

Cookie Dough:

  • 1 cup (226 g) butter, (2 sticks) room temperature
  • 1 cup (200 g) granulated sugar
  • ½ cup (100 g) brown sugar, gently packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ¾ cups (330 g) all-purpose flour, (stir, spoon, & level)
  • ½ cup (40 g) unsweetened cocoa powder
  • 1 ½ tsp cream of tartar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

For Coating:

  • ¼ cup (50 g) granulated sugar
  • 1 Tbsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  • In a stand mixer fitted with the paddle attachment, cream together the butter, granulated sugar, and brown sugar until light. Add the eggs and vanilla, scraping the bowl as needed, and mix until combined.
  • In a large bowl, whisk the flour, cocoa powder, cream of tartar, baking soda, baking powder, and salt until evenly combined.
  • With the mixer on low, add the dry ingredients to the wet and mix just until incorporated. Do not overmix.
  • Scoop the dough into roughly 2-tablespoon portions and roll into balls. In a small bowl combine the granulated sugar and cinnamon. Roll each dough ball in the cinnamon-sugar and place on the prepared baking sheet at least 2 inches apart.
  • Optional: Chill the tray of dough in the freezer for about 10 minutes (or in the refrigerator for 30+ minutes) for thicker, softer cookies.
  • Or bake immediately if you prefer a flatter cookie with crisp edges and more cracks on top.
  • Bake at 350°F for 9–11 minutes, until the edges are set and the centers remain soft and slightly shiny.
  • Immediately after removing from the oven, sprinkle a little extra cinnamon-sugar on top of each hot cookie so it adheres. Let cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely. Store any leftovers in an airtight container.
