This recipe is an updated version of one I first shared several years ago. I refreshed the photos and refined the presentation because I still love this dressing—it may even remind you of popular cilantro-lime dressings from restaurants. It’s bright, slightly tangy, and just the right balance of savory and sweet.

Cilantro-Lime Vinaigrette

Ingredients

  • ⅓ cup lime juice, (2-3 juicy limes)
  • ¼ cup rice vinegar
  • 4 cloves garlic
  • 1 tsp kosher salt
  • 2 tsp granulated sugar
  • 1 cup oil, (canola or vegetable)
  • ½ cup cilantro, stems removed

Instructions

  • Blend the lime juice, rice vinegar, garlic, salt, and sugar in a food processor or blender until combined.
  • With the blender running, slowly stream in the oil until the dressing emulsifies. Add the cilantro and blend until fully incorporated. Serve immediately or chill. Refrigerate up to 10 days.
