
I’ve been on a lime kick lately — and a coconut kick too — so it was only a matter of time before I combined the two. I realized I hadn’t made any popsicles this summer, so I decided to use up some key lime juice in the fridge and a can of coconut milk from the pantry. The result: refreshing, easy Coconut Key Lime Popsicles that were a big hit.

These popsicles require just a few ingredients and minimal hands-on time. The lime brightness balances the creamy coconut beautifully, and the lime zest adds a pop of fresh flavor. They freeze firm and are perfect for hot days.

granulated sugar -
⅓ cup

13.5 oz
(400 ml)
can whole fat coconut milk -
6 Tbsp
key lime juice
(I used Nellie & Joe’s Famous Key West Lime Juice) - Zest of 1–2 limes
Instructions

Heat the sugar and water in the microwave for about 1 minute, or until the sugar dissolves. This makes roughly ½ cup of simple syrup.

In a bowl, whisk together the coconut milk, key lime juice, lime zest, and the simple syrup until smooth.

Pour the mixture into popsicle molds and freeze for 6–8 hours, or until firm.
Notes
For a lighter texture, stir the mixture well before pouring into molds. If you prefer less sweetness, reduce the simple syrup slightly. Whole-fat coconut milk gives the creamiest result.
