I’ve made the same coconut ice cream without lime and enjoyed it, but adding lime brightens the flavor and adds a pleasant tart contrast to the sweet coconut. Both versions are tasty, but the lime really makes it pop.

This recipe is no-churn and simple: whip heavy cream to stiff peaks, fold in a few flavoring ingredients, transfer to a freezer-safe container, and freeze until firm. No machine, no fuss—just delicious homemade ice cream.

- 2 cups (473 ml) heavy whipping cream
- zest of 1 lime
- ¼ cup (59 ml) lime juice
- 15 oz (425 g) can Cream of Coconut (NOT coconut milk or coconut cream — use brands like Coco López or Coco Real)
- 1 tsp coconut extract

In the bowl of a stand mixer fitted with the whisk attachment, whip the heavy cream together with the lime zest until stiff peaks form, about 3½ minutes on high speed.

Gently fold in the lime juice, cream of coconut, and coconut extract until evenly combined. If the cream of coconut is thick or partially solid, warm it briefly in the microwave for 10–15 seconds or whisk it separately to loosen it before folding it into the whipped cream. Avoid heating it until hot so the whipped cream doesn’t deflate.

Pour the ice cream mixture into a 2-quart freezer-safe container, smoothing the top.

Freeze for at least 6 hours or until firm; overnight is best. Keep stored in the freezer.
