I love soup, and this Chicken Orzo Soup is one I return to often. It features plenty of carrots, green onions, celery and tender chicken in a creamy, comforting broth, with small orzo pasta distributed through every spoonful.

I often prefer orzo over larger noodles because the small pasta doesn’t soak up all the broth when reheating leftovers, so the soup stays silky and satisfying.

Ingredients

  • 2 Tbsp butter
  • 2 chicken breasts, cubed
  • 1 ½ cups sliced or diced carrots (I use mini carrots and slice them thin)
  • 1 ½ cups diced celery
  • 2 tsp minced garlic (about 4 cloves)
  • 1 cup green onions, sliced (1 small bunch)
  • 4 cups chicken broth
  • ½ cup orzo
  • 1 cup half & half
  • 2 Tbsp cornstarch
  • 2 Tbsp cold water
  • salt and pepper, to taste
  • Optional: Nature’s Seasoning or garlic salt, to taste

Instructions

  • Melt the butter in a large stockpot over medium heat. Add the cubed chicken and the carrots. Cook, stirring occasionally, until the chicken is nearly cooked through.
  • Add the diced celery, minced garlic, and sliced green onions. Cook a few minutes more until the vegetables are softened and fragrant.
  • Pour in the chicken broth, bring to a simmer, and cook for about 5 minutes to meld the flavors.
  • While the soup simmers, cook the orzo according to package directions, drain, and stir the cooked orzo into the pot.
  • Add the half & half. To slightly thicken the broth, whisk the cornstarch into the cold water until smooth, then stir it into the simmering soup. Cook briefly until the broth thickens slightly.
  • Taste and season with salt, pepper, and optional seasonings like Nature’s Seasoning or garlic salt as desired. Serve hot.
