When the holidays roll around I don’t want to sacrifice flavor, so I look for simple swaps that make classic dishes lighter without losing the taste that makes them special.

Replacing part of the potatoes with cauliflower is one of those swaps. It lowers carbs and calories while keeping the creamy texture most of us expect from mashed potatoes.

Pure cauliflower “mashed potatoes” don’t deliver the same flavor or mouthfeel as real mashed potatoes. I enjoy cauliflower, but when it’s meant to replace potatoes entirely the result can feel off. The simple solution is to mix them.

They knew cauliflower was in it but said it tasted like regular mashed potatoes—if I hadn’t told them, they likely wouldn’t have noticed.

Trick for Super Smooth Cauliflower Mashed Potatoes

For a silky texture use a potato ricer to press the cooked vegetables. This produces a light, lump-free result without overworking the starch in the potatoes.

I steam both the cauliflower and potatoes together in an Instant Pot for about 7 minutes; the cauliflower will be very soft and the potatoes will be tender but still hold up, which balances the texture. You can also steam or boil them separately if you prefer.

To make the mash creamy and well seasoned, stir in 2–3 wedges of soft cheese, extra minced garlic, salt and pepper, and a little of the reserved cooking liquid until you reach the desired consistency. The cooking liquid helps thin the mash without adding dairy.

Creamy Cauliflower and Mashed Potatoes

A lighter mashed potatoes recipe made with half cauliflower and half potatoes. Velvety, creamy, and perfect for holidays or everyday meals.
Yields6 servings (about 1/2 cup each)

Ingredients

  • 1 lb potatoes, peeled and diced (about 3 cups; 2–3 potatoes, any variety)
  • 1 lb cauliflower florets, about 3 cups (1 head)
  • 2 wedges soft creamy cheese
  • 1 tsp minced garlic
  • salt and pepper, to taste
  • cooking liquid, reserved from steaming or boiling

Instructions

 

  • Boil or steam the diced potatoes and cauliflower florets until very soft, either together or separately.
  • If using an Instant Pot: pour 1 cup water into the pot, place a steamer basket inside, add the vegetables, cook on high pressure for 6–7 minutes, then quick release.
  • Remove the vegetables and reserve the cooking liquid. Press them through a potato ricer, mash with a masher, or beat with an electric mixer until smooth.
  • Stir in the soft cheese, minced garlic, salt and pepper to taste, and add just enough reserved cooking liquid to reach your preferred consistency. Serve warm.

Notes

BOIL: Cauliflower 12–15 minutes / Potatoes 15–20 minutes.

STEAM: Cauliflower about 10 minutes / Potatoes about 20 minutes, depending on size.
