Beat the summer heat with these Strawberry Mango Chia Popsicles! Fresh fruit, chia seeds, and coconut water are all you need to make these refreshing, hydrating popsicles.

When the temperature climbs, homemade popsicles are one of the easiest ways to cool off. I recently replaced my old dollar-store molds with a sturdier set and couldn’t wait to try them out. These Strawberry Mango Chia Popsicles were the perfect test — bright, naturally sweet, and kid-friendly.
Making popsicles at home lets you control the ingredients and reduce added sugar and artificial additives. This recipe uses fresh (or frozen) strawberries and mango, coconut water for natural electrolytes, chia seeds for texture and fiber, and a touch of honey if you want extra sweetness. The result is a light, hydrating treat that’s nutritionally better than many store-bought options.

I also love the visual appeal of the two-toned, marbled popsicles you get when you pour the strawberry and mango purees separately into the molds. They look fun and professional, and kids are always more excited to eat something that looks special.


Strawberry Mango Chia Popsicles

Ingredients
- 1 ½ cups (210 g) strawberries (fresh or frozen)
- 1 ½ cups (210 g) mango pieces (fresh or frozen)
- 1 ¼ cups (296 ml) coconut water
- 4 tsp chia seeds
- 1 tsp honey (optional)
Instructions

In a blender or food processor, puree the strawberries with half of the coconut water. Taste and blend in honey if you prefer a sweeter mix. Stir in 2 teaspoons of chia seeds, then set the mixture aside to thicken slightly.

Rinse the blender if needed, then puree the mango with the remaining coconut water. Sweeten with honey to taste, and stir in the remaining 2 teaspoons of chia seeds.

For a marbled look, alternate pouring spoonfuls of each puree into popsicle molds. Place lids on the molds (or insert sticks after partial freezing if your mold recommends it) and freeze until fully set, usually several hours or overnight.
