The Irresistible Pairing: Pumpkin and Cream Cheese

Few flavor combinations capture the essence of autumn quite like pumpkin and cream cheese. The earthy sweetness of pumpkin finds its perfect counterpart in the tangy, smooth richness of cream cheese, creating a harmonious balance that is truly divine. It’s a pairing that has become a staple in my kitchen, inspiring a variety of delightful treats. You might already be familiar with some of my other popular creations:

Introducing the Pumpkin Cream Cheese Bundt Cake: A Hidden Delight

Instead of simply adorning a traditional pumpkin bundt cake with a layer of cream cheese frosting, I decided to take this creation to the next level by baking the cream cheese directly into the heart of the cake. Much like my beloved cream cheese pumpkin bread, this approach ensures that the luscious, creamy flavor permeates the entire dessert. This innovative method creates a stunning visual and textural surprise when the cake is sliced, revealing a beautiful, intricate swirl of cheesecake nestled within the tender pumpkin crumb.

This **velvety pumpkin cake**, infused with an aromatic medley of **warm spices** and featuring a **smooth, rich cream cheese filling**, transcends the typical dessert category. It’s wonderfully versatile, equally suited for a special breakfast, an elegant snack cake with your afternoon tea, or a show-stopping dessert to conclude a holiday meal. Its impressive presentation and delectable flavor profile make it an ideal choice for holiday entertaining, whether gracing your Thanksgiving dessert table or adding a touch of festive cheer to a holiday brunch. It’s truly a cake that leaves a lasting impression on everyone who tastes it.

Crafting the Perfect Pumpkin Bundt Cake Base

Creating this pumpkin cream cheese bundt cake is surprisingly straightforward, a rewarding baking project for both novice and experienced bakers alike. One of its great advantages is that it thoughtfully utilizes a **full 15-ounce can of pumpkin puree**, ensuring a rich, authentic pumpkin flavor throughout the cake without any leftover partial cans. For an unparalleled aromatic experience, I cannot recommend enough the use of my homemade pumpkin pie spice recipe. This carefully balanced blend of cinnamon, ginger, nutmeg, cloves, and allspice elevates the pumpkin flavor, infusing the cake with truly cozy and inviting aromas that are synonymous with fall.

The process begins with combining the dry ingredients, followed by creaming together the fats and sugar, then incorporating the wet ingredients, and finally gently folding in the dry mixture. Precision and care at each step contribute to the cake’s beautifully tender and moist texture. Don’t forget to refer to the comprehensive recipe card at the end of this post for precise ingredient measurements and detailed instructions. Getting the batter right is the first crucial step to achieving bundt cake perfection.

A visual step-by-step guide showing the mixing process of the pumpkin cake batter in a stand mixer, from creaming butter and sugar to combining all ingredients.

Step-by-Step Pumpkin Cake Preparation

  1. In a spacious mixing bowl, combine the **all-purpose flour, baking powder, baking soda, salt, and your fragrant pumpkin pie spice**. Whisk these dry ingredients thoroughly to ensure they are evenly distributed, setting the foundation for a perfectly balanced cake.
  2. Using the paddle attachment of your stand mixer, embark on the creaming process. Beat the **room temperature unsalted butter, oil, and granulated sugar** together until the mixture transforms into a light, airy, and fluffy consistency. This step is vital for incorporating air, which contributes to the cake’s tender crumb.
  3. Next, integrate the star ingredient, **pumpkin puree**, along with the **large eggs**. Continue blending until these wet ingredients are fully combined into the creamy mixture. Take a moment to scrape down the sides of the bowl with a spatula to ensure everything is thoroughly incorporated.
  4. Finally, gradually introduce the **prepared flour mixture** into the wet ingredients. Mix on low speed until the batter is *just* combined. Overmixing can lead to a tough cake, so stop as soon as no streaks of flour remain. Set this wonderfully aromatic pumpkin cake batter aside while you prepare the filling.

Preparing the Luscious Cream Cheese Filling

The cream cheese filling is the heart of this bundt cake, offering a delightful counterpoint to the spiced pumpkin. Achieving its smooth, creamy texture is key to the overall success of the dessert. Starting with room temperature ingredients is paramount, as this ensures a lump-free, perfectly blended filling. This filling isn’t just about flavor; the addition of a small amount of flour helps stabilize it during baking, preventing it from completely melting into the pumpkin cake batter and ensuring that beautiful, distinct swirl when sliced. Follow these simple steps for a truly luscious filling:

A visual guide showing the process of making cream cheese filling, from combining ingredients to a smooth, creamy texture.

Step-by-Step Cream Cheese Filling Preparation

  • In a large mixing bowl, combine the **softened cream cheese, granulated sugar, and all-purpose flour**. Use an electric hand mixer to beat these ingredients together until they are perfectly smooth and fully combined. Remember to scrape down the sides of the bowl to ensure no pockets of unmixed ingredients remain.
  • Carefully beat in the **large eggs**, one at a time. It’s crucial to incorporate each egg completely into the mixture before adding the next. This incremental addition ensures a homogeneous, silky-smooth cream cheese filling that will bake beautifully within the pumpkin cake. Once the eggs are fully blended, your creamy filling is ready for assembly.

Assembling Your Show-Stopping Pumpkin Bundt Cake with Cream Cheese Filling

With both your spiced pumpkin cake batter and creamy cheesecake filling prepared, it’s time for the exciting assembly phase. This is where the magic happens, transforming simple batters into an elegant, layered bundt cake. You’ll need a good quality 10 to 12-cup bundt pan for this recipe; I personally love using a 10-cup Nordic Ware Heritage Bundt Pan for its intricate design and reliable non-stick properties. A well-greased pan is crucial to ensure your beautiful cake releases effortlessly after baking.

Layering Technique for the Perfect Swirl

  1. **Prepare your bundt pan meticulously** by generously coating it with a high-quality **non-stick baking spray**. I find that products like Baker’s Joy work wonders, ensuring every crevice is greased and floured for a clean release.
  2. Evenly spread **approximately half of the rich pumpkin batter** into the bottom of the prepared bundt pan. Use an offset spatula to gently push the batter up the sides of the pan slightly, creating a shallow well in the center for the filling.
  3. Carefully pour **all of the smooth cream cheese filling** directly over the pumpkin cake batter. Gently spread it out with a spatula to form an even layer, ensuring it doesn’t touch the very edges of the pan where it might stick.
  4. Now, for the final layer: **Gently dollop and spread the remaining pumpkin batter** on top of the cream cheese filling. This step requires a delicate touch. Since the cheesecake batter is naturally thinner than the pumpkin cake batter, it might try to peek through. The key is to spoon the pumpkin batter in small dollops and then gently spread it to cover the cream cheese layer as best you can. A few visible spots of cream cheese are perfectly fine and add to the cake’s rustic charm! This layering technique is what creates the beautiful marbled effect when the cake is sliced.

Baking to Perfection: Important Tips and Tricks

Baking this substantial bundt cake to perfection requires a keen eye and a bit of patience. Due to its size and the dense, moist nature of both the pumpkin cake and cream cheese filling, it will take a little longer than your average cake. But the wait is well worth it! Here are some crucial tips to ensure your Pumpkin Bundt Cake with Cream Cheese Filling bakes up beautifully golden and thoroughly cooked:

A freshly baked Pumpkin Cream Cheese Bundt Cake, golden brown and perfectly risen, cooling on a wire rack after being inverted from the pan.
  • **Bake at a consistent 350˚F (175˚C) for approximately 60-65 minutes.** Keep in mind that oven temperatures can vary, so your cake might require a few extra minutes. Don’t be alarmed by a longer baking time; this is a large, heavy cake that needs thorough cooking.
  • **Prevent over-browning:** If you notice the top of your cake (which will become the bottom when inverted) starting to brown too quickly, loosely **cover the bundt pan with aluminum foil** for the last 10-15 minutes of baking. This helps shield the crust from excessive heat while allowing the interior to finish cooking.
  • **The ultimate doneness test:** Knowing when a bundt cake is perfectly baked is crucial. The cake is done when a wooden toothpick or cake tester inserted into the deepest part of the pumpkin cake (avoiding the cream cheese layer if possible, or focusing on the softer cracks where cake batter is dominant) comes out clean. Equally important is the cake’s texture: it should feel **firm to the touch** when gently pressed. If it feels at all jiggly or soft in the center, it needs more time in the oven. *A personal anecdote: I once underbaked this cake by about 10 minutes, despite a clean toothpick, because I didn’t heed the “jiggly” warning. The toothpick must have scraped clean from the outer crust, misleading me. Always double-check by testing in the softer, thicker parts of the cake!*
  • **Adjusting oven rack position:** Given that bundt cakes tend to rise significantly, you may want to **re-position your oven rack one slot lower** than the center. This prevents the top of the cake from getting too close to the upper heating element, which can cause uneven baking or excessive browning.

Serving and Storage Tips for Maximum Enjoyment

Once your magnificent Pumpkin Bundt Cake with Cream Cheese Filling has emerged from the oven, the anticipation builds! Proper cooling, slicing, and storage are key to ensuring every bite is as delicious as intended. This cake’s intricate design and dual textures deserve careful handling to preserve its beauty and flavor.

  • **Cooling process:** Allow the warm pumpkin cream cheese cake to **cool undisturbed in its bundt pan for approximately 15 minutes** after baking. This crucial period allows the cake to firm up and pull away slightly from the pan’s edges, making inversion much easier. After 15 minutes, carefully **invert the bundt cake onto a wire cooling rack** and allow it to **cool completely** at room temperature before attempting to slice. Rushing this step can cause the cake to tear or crumble.
  • **Slicing perfection:** Once fully cooled, use a sharp, non-serrated knife to **cut the cake into generous 1-inch slices**. The clean cut will beautifully showcase the distinct pumpkin cake and cream cheese swirl.
  • **Storage instructions:** Due to the presence of the delicate cream cheese filling, this cake requires refrigeration to maintain its freshness and food safety. Store any leftover slices of this delightful cake in an **airtight container in the refrigerator for up to 4 days**. For longer storage, individual slices can be wrapped tightly in plastic wrap and then foil, and frozen for up to 1-2 months. Thaw overnight in the refrigerator before serving.

Elegance in Simplicity: No Frosting Required

One of the many charms of this Pumpkin Bundt Cake with Cream Cheese Filling is its inherent balance of flavors and sweetness. It’s deliberately crafted to be **not overly sweet**, allowing the natural flavors of pumpkin and warm spices to shine, complemented by the subtle tang of the cream cheese. This thoughtful balance is precisely why it transitions effortlessly from a wholesome **breakfast** or sophisticated **brunch** item to a truly satisfying **dessert** for any time of day.

For an extra touch of visual appeal and a delicate hint of added sweetness, a simple dusting of **powdered sugar** over the cooled cake is often all that’s needed. This creates a beautiful, elegant finish that perfectly contrasts with the rich color of the pumpkin. While some might be tempted to add a more elaborate topping, I firmly believe this cake stands confidently on its own. If you desire a bit more glaze, a light powdered sugar glaze could be drizzled over the top, but honestly, it’s rarely necessary. I encourage you to try it as is first, and then decide! Ingredients

Pumpkin Cake:

  • 2 ¾ cups (330 g) all-purpose flour, (stir, spoon & level)
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 ½ tsp pumpkin pie spice
  • 6 Tbsp (85 g) unsalted butter, room temperature
  • ¾ cup (177 ml) oil, (canola/vegetable)
  • 1 ½ cups (300 g) granulated sugar
  • 15 oz (425 g) can pumpkin pureé, (not pie filling)
  • 3 large eggs, room temperature

Cream Cheese Filling:

  • 8 oz (226 g) cream cheese, room temperature
  • ½ cup (100 g) granulated sugar
  • 6 Tbsp all-purpose flour
  • 2 large eggs, room temperature

Equipment

  • Nylon Whisk
  • 6-Quart Steel Mixing Bowl
  • Electric Hand Mixer
  • KitchenAid 5-Qt. Stand Mixer
  • Nordic Ware Heritage Bundt Pan
  • Silicone Spatula Set

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175°C).
  • PUMPKIN CAKE: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, oil, and sugar until light and fluffy.
  • Add the pumpkin puree and eggs. Blend until well combined. Scrape down the sides of the bowl.
  • Slowly add the flour mixture to the wet ingredients, mixing until just combined. Do not overmix. Set the cake batter aside.
  • CREAM CHEESE FILLING: In a separate large bowl, place the cream cheese, sugar, and flour. Beat together with an electric hand mixer until combined and smooth. Scrape down the sides of the bowl.
  • Beat in the eggs one at a time, ensuring each addition is fully incorporated before adding the next. Set the cream cheese filling aside.
  • ASSEMBLY: Prepare a 10 to 12-cup bundt pan by coating it thoroughly with non-stick baking spray (such as Baker’s Joy).
  • Spread half of the pumpkin batter evenly into the prepared bundt pan.
  • Carefully pour all of the cream cheese filling over the pumpkin cake batter, and gently spread it evenly with a spatula.
  • Gently dollop and spread the remaining pumpkin batter on top of the cream cheese filling. (NOTE: The cheesecake batter is much thinner than the pumpkin cake batter, so it may try to come to the top. Dollop the cake batter and then gently spread it to cover the cheesecake as best as possible. It’s perfectly acceptable if some cheesecake peeks through.)
  • BAKE at 350˚F (175°C) for 60-65 minutes, or until a toothpick inserted into the pumpkin cake portion comes out clean and the cake feels firm to the touch. If the cake starts to brown too much, cover it loosely with foil for the last 10-15 minutes of baking.
  • Allow the pumpkin cream cheese cake to cool in the pan for 15 minutes. Then, invert the bundt cake onto a wire rack to cool completely. Once fully cooled, dust the top with powdered sugar before slicing into 1-inch pieces.

Notes

  • Depending on your oven, you may want to re-position the oven rack down one slot. This prevents the cake from being too close to the upper heating element, as it rises quite a bit during baking.
  • Pumpkin Pie Spice is a blend of cinnamon, ginger, nutmeg, cloves, and allspice. If you cannot find it at your local store, use the linked recipe to make your own.
  • Since this cake contains cream cheese, it is best stored in an airtight container in the refrigerator for up to 4 days to maintain freshness and safety.
