Ingredients
- 2 boneless skinless chicken breasts
- 1 zucchini
- 1 yellow squash
- ½ cup pesto
- Salt & Pepper
Instructions

Cut the chicken into smaller cubes and the zucchini and yellow squash into ½- to 1-inch pieces. Keep the chicken pieces slightly smaller than the vegetables so everything finishes cooking at the same time.

Place the chicken and vegetables in a large bowl. Season with salt and pepper, then add the pesto. Toss until everything is evenly coated.

Thread the chicken and squash onto pre-soaked wooden or bamboo skewers, leaving a small gap between pieces to promote even cooking.
