I love one-pot dinners, and one-skillet meals are some of my favorites. When VELVEETA Cheesy Skillets invited me to be an ambassador, I jumped at the chance. It was fun to see people’s surprised reactions when their skillet came back with dinner included — a creative way to remind people how useful a good skillet can be.

Now for the recipe. This version uses the Nacho Supreme VELVEETA Cheesy Skillets kit. I added black beans and corn for color and texture, and topped the finished dish with broken tortilla chips and spoonfuls of salsa for a festive touch. It took 20 minutes or less from start to finish and was all cooked in one skillet — exactly the kind of easy, tasty meal I look for on busy nights.

Nacho Supreme Skillet Pasta

Ingredients

  • 1 box Nacho Supreme VELVEETA Cheesy Skillets Dinner Kit
  • 1 lb lean ground beef
  • 2 cups water
  • 15 oz can black beans, rinsed and drained
  • 15 oz can corn, drained
  • 10 tortilla chips broken into large pieces
  • ½ cup salsa, optional (as desired for color)

Instructions

  • Brown the ground beef in a large skillet. Drain excess fat and return the beef to the skillet.
  • Stir in 2 cups of water, the seasoning packet and pasta from the dinner kit, then add the drained black beans and corn. Cover the skillet with a lid.
  • Simmer, stirring frequently, until most of the water has evaporated, about 9 to 11 minutes. Remove from heat.
  • Stir in the VELVEETA cheese sauce pouch and the salsa pouch from the kit. Top with broken tortilla chips and serve.
