There’s nothing quite like a warm, comforting casserole to bring a family together, especially on a chilly evening or a busy weeknight. However, this particular Cheesy Chicken & Wild Rice Casserole offers a refreshing twist. It achieves an incredibly flavorful and delightfully cheesy profile without those common ingredients, building its rich, satisfying texture from scratch. to 10 Servings

Ingredients

For the Filling:

  • 3 Tbsp Extra Virgin Olive Oil
  • 1 medium onion, finely diced
  • 3 stalks celery, diced
  • 3 carrots, peeled & diced
  • 2 Tbsp fresh minced garlic (approximately 5 cloves)
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • ¼ tsp garlic powder
  • 2 cups shredded chicken breast (store-bought rotisserie chicken or a 13oz can of chicken works well)
  • 2 cups steamed white rice (minute white rice can be used for convenience)
  • 2 cups prepared wild rice (cooked according to package directions, a rice cooker is great for this)

For the Cheese Sauce:

  • 4 Tbsp butter
  • ¼ cup all-purpose flour
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cups chicken broth
  • 3 cups shredded cheddar cheese, divided

Instructions

  • Preheat your oven to 350˚F (175˚C). In a large pot or Dutch oven, heat the olive oil over medium heat. You can also heavily spray the pot with an oil spritzer for a lighter touch. Add the finely diced onion, celery, and carrots to the hot oil. Sauté these aromatic vegetables, stirring occasionally, until they have softened and become slightly translucent, which usually takes about 10 minutes. This step is crucial for building the foundational flavor of your casserole. Next, stir in the minced garlic, kosher salt, black pepper, and garlic powder. Continue to cook for just 1 minute more, allowing the spices to bloom and the garlic to become fragrant, but be careful not to burn the garlic. Finally, incorporate the shredded chicken and both the prepared white rice and wild rice into the pot. Reduce the heat to low and keep the mixture warm while you prepare the cheese sauce.
  • To prepare the luscious cheese sauce, melt the butter in a separate medium saucepan over medium-high heat. Once the butter is fully melted and slightly shimmering, whisk in the all-purpose flour, along with the ¼ tsp kosher salt and ¼ tsp black pepper. Cook this mixture, constantly whisking, for 1-2 minutes to create a roux. This step cooks out the raw flour taste and will ensure a smooth, thick sauce. Slowly pour in the chicken broth, whisking continuously to prevent any lumps from forming. Continue to whisk until the sauce thickens to your desired consistency and is nearly boiling. Remove the saucepan from the heat immediately. Stir in 2 cups of the shredded cheddar cheese until it has completely melted and the sauce is silky smooth. The residual heat from the sauce will be sufficient to melt the cheese perfectly.
  • Gently pour the prepared cheese sauce into the warm chicken and rice mixture. Fold everything together carefully with a spatula or large spoon, ensuring that all the ingredients are thoroughly coated in the rich, creamy sauce. Transfer this delightful mixture into a greased 9×13″ baking dish. Spread it evenly across the dish. Finally, sprinkle the remaining 1 cup of shredded cheddar cheese generously over the top of the casserole. This will create a beautiful golden crust. Bake the casserole in your preheated oven for 25-30 minutes, or until the casserole is bubbling around the edges and the cheese on top is beautifully melted and lightly browned. Serve hot and enjoy this comforting, cheesy masterpiece!

Notes

For an even richer flavor, consider using homemade chicken broth. Rotisserie chicken is a great shortcut for shredded chicken, saving significant time. If you prefer a nuttier flavor, you can toast the wild rice lightly before cooking it. Feel free to adjust the amount of garlic based on your preference; some might enjoy a stronger garlic presence. This casserole reheats wonderfully, making it an excellent option for meal prepping throughout the week. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.

To vary the dish, experiment with different cheese blends like Gruyère or Monterey Jack for a slightly different flavor profile. Adding some sautéed mushrooms, peas, or corn during the filling stage can also enhance the vegetable content and texture. For a hint of smokiness, stir in a bit of cooked, crumbled bacon with the chicken and rice. If you’re serving a crowd, this recipe can easily be doubled and baked in two separate 9×13-inch dishes or a very large roasting pan.

This Cheesy Chicken & Wild Rice Casserole stands out as a true testament to the power of homemade flavor. Instead of relying on shortcuts that can sometimes mask the natural tastes of fresh ingredients, this recipe guides you through creating a rich, savory experience from scratch. The combination of tender shredded chicken, two types of rice – fluffy white rice and nutty wild rice – and a luxuriously creamy, homemade cheese sauce creates a symphony of textures and tastes that is both comforting and incredibly satisfying. The blend of diced onions, celery, and carrots, gently sautéed to perfection, forms a sweet and aromatic base that deepens the overall flavor profile of the dish.

One of the key elements that elevate this casserole is the scratch-made cheese sauce. Beginning with a classic roux of butter and flour, then slowly whisking in chicken broth, ensures a smooth, lump-free foundation. Adding cheddar cheese off the heat allows it to melt into a velvety sauce without becoming grainy or separating. This attention to detail in the sauce-making process is what gives the casserole its signature creamy texture without the need for canned cream soups, offering a fresher, more robust flavor that truly shines. The two types of rice also play a vital role, providing both the soft comfort of white rice and the earthy, chewy texture of wild rice, creating a more dynamic and interesting bite.

Preparing this Cheesy Chicken & Wild Rice Casserole is a rewarding culinary journey that proves that simplicity can lead to extraordinary results. It’s an ideal dish for those busy weeknights when you crave something hearty and wholesome but don’t want to spend hours in the kitchen.
