The Essence of a Perfect Chocolate Cherry Cake

This chocolate cherry cake truly embodies everything a dream chocolate cake should be. It’s tender, undeniably moist, and boasts a deeply chocolatey profile that is beautifully punctuated by the bright, tart notes of cherries. This balance of flavors prevents it from being overly decadent, ensuring each bite is as enjoyable as the last. And the frosting? Our chocolate cream cheese frosting is lightly sweetened with just the right amount of tang, making it the absolute perfect companion for this magnificent cake.

For all you fellow chocoholics, you’ve found your tribe! I’ve dedicated myself to perfecting a chocolate cake for every craving. If you’re seeking a profoundly rich and moist cake, don’t miss my devil’s food cake. If you adore the combination of chocolate and fruit, this chocolate raspberry cake offers another delightful pairing. And if the luscious cherries were your primary draw, then you simply must try this divine cherry cheesecake next!

Essential Ingredients & Smart Substitutions for Your Chocolate Cherry Cake

Crafting the perfect chocolate cherry cake starts with understanding your ingredients. Here’s a closer look at what you’ll need and how to make clever substitutions if necessary:

Measured chocolate cherry cake ingredients arranged neatly on kitchen countertop, ready for baking.
  • Dutch-Processed Cocoa Powder: This is my secret weapon for achieving that deep, dark, and intensely rich chocolate flavor in both the cake and the frosting. Dutch-processed cocoa has been treated to reduce its acidity, resulting in a smoother, less bitter chocolate taste and a darker color. While you can use natural cocoa powder (like Hershey’s regular cocoa) in a pinch, note that the cake’s color won’t be as dark, and the flavor will be slightly different. For best results, stick with Dutch-processed.
  • All-Purpose Flour: The backbone of our cake’s structure. Make sure to measure it correctly, preferably by weight, or by spooning it into your measuring cup and leveling it off. Too much flour can lead to a dry cake.
  • Kosher Salt, Baking Powder, and Baking Soda: These are essential for leavening and balancing the flavors. Baking soda reacts with acidic ingredients (like cocoa, if using natural) to create lift, while baking powder provides consistent rise. Salt enhances all the other flavors. Don’t skip these!
  • Large Eggs: Provide structure, richness, and moisture. Ensure they are at room temperature for optimal emulsification with the other wet ingredients, leading to a smoother batter.
  • Vanilla Extract: A crucial flavor enhancer that complements chocolate beautifully. Feel free to experiment with other extracts like almond or coffee extract for a unique twist.
  • Granulated Sugar: Sweetens the cake and contributes to its tender crumb.
  • Vegetable Oil: Key to achieving a supremely moist cake that stays soft for days. Unlike butter, oil remains liquid at room temperature, keeping the cake consistently tender. You can easily swap in any neutral-flavored oil, such as canola, grapeseed, or sunflower oil. For an adventurous twist, if you find yourself out of oil, consider trying my chocolate mayonnaise cake, where mayo replaces the oil and eggs!
  • Brewed Coffee: Don’t worry, your cake won’t taste like coffee! This ingredient is magical for deepening and intensifying the chocolate flavor, making it even more robust. Use strong brewed coffee, or if you only have instant, simply dissolve a teaspoon of instant coffee or espresso powder in ¼ cup of hot water and let it cool.
  • Cherry Pie Filling: The star fruit component! You’ll need about 21 ounces, which is typically one standard can. For a truly homemade touch, consider making your own with my cherry pie filling recipe. If you do, you’ll use most of a batch, leaving about 1 cup leftover – perfect for serving with my chocolate ice cream or incorporating into a cherry almond tart!

For the Chocolate Cream Cheese Frosting:

  • Full-Fat Cream Cheese: Absolutely essential for a rich, tangy, and stable cream cheese frosting. Always use full-fat block cream cheese, not whipped cream cheese or cream cheese spread from a tub, as these will result in a much looser, less stable buttercream. Ensure it’s at room temperature for a lump-free, silky smooth frosting.
  • Unsalted Butter: Provides richness and structure to the frosting. Like the cream cheese, it must be at room temperature for proper emulsification.
  • Powdered Sugar (Confectioners’ Sugar): Sweetens and thickens the frosting, giving it that classic smooth texture. Sifting is highly recommended to prevent lumps.
  • Kosher Salt: A tiny pinch balances the sweetness of the frosting and enhances the chocolate flavor.
  • Dutch-Processed Cocoa Powder: Infuses the frosting with deep chocolate flavor and helps stabilize it. Sifting is crucial here too!
  • Vanilla Extract: Adds a lovely aromatic depth to the frosting.

Creative Variations for Your Chocolate Cherry Cake

While this chocolate cherry cake is perfect as is, it’s also wonderfully versatile! Feel free to customize it to your heart’s content with these exciting variations:

  • Enhance with Additional Mix-Ins: Elevate the texture and flavor by folding in ½ to 1 cup of your favorite chocolate chips alongside the cherry filling. Semi-sweet, dark chocolate, or even white chocolate chips would create delightful pockets of melted chocolate. For a nutty crunch, consider adding toasted almonds, hazelnuts, or walnuts – their flavors marry beautifully with chocolate and cherry.
  • Transform into a Classic Black Forest Cake: For a more traditional German dessert experience, transform this recipe into a Black Forest cake. Instead of using the chocolate cream cheese frosting between layers, fill the cake with generous amounts of freshly whipped cream. Additionally, steep the cherry pie filling in a tablespoon or two of Kirsch (cherry brandy) for an authentic boozy kick.
  • Experiment with Different Fruit Fillings: Not a cherry fan, or simply want to try something new? This cake base is incredibly adaptable to other fruit fillings. The luscious pie filling from my amazing blueberry pie recipe or my vibrant mixed berry pie filling would both be absolutely fantastic in this chocolate cake, offering a different fruity counterpoint.
  • Change Up the Frosting: The chocolate cream cheese frosting is divine, but you have options! For a lighter touch, skip the frosting entirely and serve individual slices with a dollop of freshly whipped cream and extra cherry filling on the side. Alternatively, for a different texture and flavor profile, top your cake with my silky chocolate Swiss meringue buttercream, known for its buttery smoothness, or my rich and classic chocolate American buttercream frosting recipe.

Professional Tips for Baking Your Best Chocolate Cherry Cake

Achieve bakery-quality results with these expert tips, honed over years of baking:

  • Tapioca Starch for Homemade Cherry Pie Filling: If you’re opting to make your own cherry filling and plan to freeze any leftovers, always use tapioca starch instead of cornstarch as your thickening agent. Cornstarch tends to become crumbly and cloudy when frozen and then thawed, compromising both texture and appearance. Tapioca starch, however, maintains its smooth texture and clarity beautifully through the freezing and thawing process.
  • Do NOT Overbake – The Golden Rule of Cake Baking: This is perhaps the most critical tip for a truly moist cake. Keep a close eye on your cake as it bakes. The cake is done when a cake tester (like a toothpick or thin skewer) inserted into the center comes out with just a few moist crumbs clinging to it, and the center gives a slight resistance when gently pressed with your finger. Remember, the cake will continue to cook slightly from residual heat as it cools outside the oven. Overbaking, even by a minute or two, will result in a dry, less enjoyable cake – and nobody wants that!
  • For Impeccably Clean Slices, Chill Your Cake: Achieving those picture-perfect, clean slices of cake is easier than you think! Refrigerate your frosted cake for at least an hour, or until thoroughly chilled, before attempting to cut it. The cold frosting and cake layers will firm up, allowing for much sharper, less messy cuts. For an extra professional touch, warm your knife by dipping it in hot water and wiping off any excess moisture before each slice. This technique creates incredibly smooth edges.
  • Room Temperature Ingredients are Key: This applies especially to eggs, butter, and cream cheese. Room temperature ingredients emulsify more effectively, creating a smoother, more uniform batter and a truly lump-free, silky frosting. Plan ahead and take them out of the fridge an hour or two before you begin baking.
  • Measure Accurately, Especially Flour: Baking is a science. Use a kitchen scale for the most accurate flour measurement. If using measuring cups, lightly spoon the flour into the cup and level it off with a straight edge; never scoop directly from the bag, as this compacts the flour and adds too much to your recipe.
  • Don’t Overmix the Batter: Once the wet and dry ingredients are combined, mix only until no dry streaks of flour remain. Overmixing develops the gluten in the flour, leading to a tough, dense cake rather than a tender, delicate crumb.

How to Make This Decadent Chocolate Cherry Cake: A Step-by-Step Guide

Follow these detailed instructions to create your own magnificent chocolate cherry cake. For precise measurements and a full printable recipe, refer to the recipe card below.

To Prepare the Chocolate Cherry Cake:

Step 1: Oven and Pan Preparation. Begin by preheating your oven to 350°F (175°C) using a conventional setting (no fan). Take a rectangular cake pan (typically 9×13 inches) and generously spray it with nonstick cooking spray. For easy removal and to prevent sticking, line the bottom with a piece of parchment paper cut to fit. This simple step makes all the difference for a clean release.

This incredibly versatile batter isn’t limited to a sheet cake! You can also bake this recipe in two 9-inch round cake pans for a lovely layer cake, or three 8-inch round cake pans for an even taller, more impressive presentation. Adjust baking times accordingly as detailed in the recipe card.

Dry ingredients combined evenly before adding to wet mixture in a mixing bowl.
Eggs, vanilla extract, and granulated sugar whisked together until light and frothy for chocolate cake batter.
Vegetable oil poured slowly into mixing bowl with eggs and sugar for chocolate cake, creating an emulsion.
Wet ingredients (eggs, vanilla, sugar, oil) blended together smoothly and emulsified in a bowl for chocolate cherry cake.

Step 2: Whisk the Dry Ingredients. In a medium-sized bowl, combine the Dutch-process cocoa powder, all-purpose flour, kosher salt, baking powder, and baking soda. Whisk these ingredients together thoroughly until they are uniformly combined. This step ensures that the leavening agents and flavorings are evenly distributed throughout the cake batter. Set this bowl aside (photo 1).

Step 3: Mix the Wet Ingredients. In a large mixing bowl, using a whisk, beat the room temperature eggs, vanilla extract, and granulated sugar until the mixture is smooth, lightened in color, and slightly frothy. This may take a couple of minutes. Next, gradually stream in the vegetable oil while continuously whisking. This slow addition helps to emulsify the batter, creating a stable mixture that will contribute to a wonderfully moist cake (photos 2-4).

Cooled brewed coffee added to wet ingredients during chocolate cherry cake batter preparation, intensifying chocolate flavor.
Wet ingredients mixed together with coffee until smooth, forming a glossy chocolate batter.
Dry ingredients gently folded into wet chocolate cake batter using a silicone spatula to avoid overmixing.
Tart cherries stirred through the chocolate cake batter to evenly distribute fruit throughout the mix.

Step 4: Combine Wet and Dry Ingredients. Pour the cooled brewed coffee into the egg and oil mixture and whisk briefly to combine. Then, add the dry ingredients to the wet mixture. Using a silicone spatula, gently fold the ingredients together. Mix just until no dry lumps of flour remain and the batter is smooth. Be careful not to overmix, as this can lead to a tough cake (photos 4-7).

Step 5: Fold in the Cherry Pie Filling. Gently stir in the cherry pie filling until it’s evenly distributed throughout the chocolate cake batter. Avoid aggressive stirring to keep the cherries intact (photo 8).

Softened butter and cream cheese at room temperature, ready to be mixed into the chocolate cream cheese frosting.
Sifted cocoa powder and powdered sugar added to butter and cream cheese mixture for smooth chocolate frosting.
Chocolate cream cheese frosting mixed until perfectly smooth, creamy, and light in a mixing bowl.

Step 6: Pour and Bake. Pour the prepared chocolate cherry batter into your lined and greased pan. Use an offset spatula to gently smooth the top of the batter, ensuring an even bake. Place the pan into your preheated oven immediately (photo 9).

Step 7: Check for Doneness. Bake until a cake tester or toothpick inserted into the center comes out with just a few moist crumbs clinging to it. Additionally, the center of the cake should spring back slightly when lightly pressed with your finger. These are the best indicators of doneness, signaling a perfectly moist cake without any dryness.

The baking time will vary significantly depending on the type and size of pan you choose. A single rectangular 9×13 inch baking dish typically requires between 40 to 45 minutes; in my oven, it took 44 minutes. If you’re using three 8-inch round cake pans, the thinner layers will bake faster, usually around 32 minutes. For two 9-inch round cake pans, anticipate a bake time of approximately 35 to 40 minutes.

While the edges of the cake might start to pull away from the sides of the pan, this is actually my least preferred test for doneness. This happens towards the very end of the baking process, and by the time you see it, you could be just 1-2 minutes away from an over-baked, dry cake! Rely on the cake tester and finger-press tests for optimal results.

Step 8: Cool the Cake. If you’ve baked round layer cakes, allow them to cool in their pans for about 5 minutes. Then, carefully invert them onto a wire rack and gently peel off the parchment paper from the bottom. Let them cool completely on the wire rack before flipping them back upright. Don’t worry if a tiny bit of cake sticks to the rack; it’s usually minimal and won’t affect the overall appearance or taste. If you’re baking a single rectangular sheet cake, simply let it cool completely on a wire rack while still in its pan. Ensure the cake is entirely cool before applying any frosting.

Prepare the Chocolate Cream Cheese Frosting:

This incredibly smooth and flavorful frosting comes together in a flash – often in just 3 minutes – provided all your ingredients, especially the butter and cream cheese, are at perfect room temperature.

Step 9: Cream Butter and Cream Cheese. In the bowl of a stand mixer fitted with the paddle attachment (or using a large mixing bowl with an electric hand mixer), beat the softened butter and room temperature cream cheese together. Cream them on medium speed until the mixture is completely homogeneous, smooth, and free of any lumps. This step is crucial for a silky frosting (photo 10).

Step 10: Add Dry Ingredients and Flavorings. Sift the cocoa powder and powdered sugar directly into the mixing bowl with the butter and cream cheese mixture. Start mixing on low speed to prevent a cloud of sugar from flying up, gradually increasing the speed until all ingredients are fully combined and smooth. Stir in the kosher salt and vanilla extract. Taste and adjust the amount of vanilla or salt if desired for your perfect flavor profile (photos 11-12).

Step 11: Lighten and Fluff the Frosting. Switch from the paddle attachment to the whisk attachment on your stand mixer. Beat the frosting on medium-high speed for 1-2 minutes until it becomes noticeably lightened in color and fluffier in texture. For an even lighter, almost mousse-like topping, you can add ¼ to ½ cup of cold heavy whipping cream at this stage and continue to beat until the mixture reaches stiff peaks, creating a more voluminous and airy frosting.

Assemble the Chocolate Cherry Cake:

Rich chocolate cream cheese frosting artfully swirled decoratively across the top of the baked cake.
Fresh cherries gently spread over the swirled chocolate cream cheese frosting on the finished cake as garnish.
A perfectly plated chocolate cherry cake slice, showing its moist texture and rich frosting, ready to be enjoyed.

Step 12: Decorate Your Masterpiece. Once your cake is completely cooled, scoop the chocolate cream cheese frosting onto the top. Using a large offset spatula, spread the frosting evenly across the surface. For an appealing rustic look, create decorative swirls using the tip of your spatula. Finish your beautiful cake by garnishing it with elegant chocolate shavings or a generous scattering of fresh or extra canned cherries, if desired (photos 13-15).

If you are making a 2 or 3-layer cake, this frosting recipe will provide a thinner, yet perfectly adequate, coating. This is actually quite ideal, as the frosting is wonderfully rich, so a thinner layer complements the cake without overpowering it. Should you desire a thicker layer of frosting or wish to pipe elaborate designs, consider doubling the frosting recipe. Alternatively, you could double it and use half as a plain cream cheese frosting (simply add a bit more vanilla extract) for the filling between layers, and use the cocoa-infused half for the exterior coating.

Chef Lindsey’s Expert Recipe Tip

When working with delicate cream cheese frosting, especially for assembling layered cakes, it is absolutely paramount that your cakes are completely cooled, or even cold from the refrigerator, before you begin frosting. Unlike a robust American buttercream recipe, cream cheese buttercream is softer and more prone to melting, which can cause it to slide right off a warm cake. Patience in cooling will save you frustration and ensure a beautiful, stable cake!

Common Questions & Recipe FAQs for Chocolate Cherry Cake

How should I store my Chocolate Cherry Cake to keep it fresh?

To maintain its incredible moistness and flavor, store the frosted chocolate cherry cake, covered tightly with plastic wrap or in an airtight container, at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to 5 days. This cake also freezes beautifully! For freezing, wrap the entire frosted cake (or individual slices) tightly in plastic wrap, then an additional layer of aluminum foil, and freeze for up to 2 months. Thaw overnight in the refrigerator before serving for best results.

Do I absolutely have to use Dutch-processed cocoa powder? What’s the difference?

While you don’t *have* to, I highly recommend Dutch-processed cocoa powder for this recipe. It’s my go-to for a reason: it delivers the best color (a rich, deep dark chocolate) and a profoundly smooth, intense chocolate flavor. Natural cocoa powder (like regular Hershey’s) will still work, but your cake won’t be quite as dark, and the chocolate flavor will be slightly brighter and more acidic. The leavening agents in the recipe are balanced for Dutch-processed cocoa, so if using natural, ensure you have sufficient baking soda to react with its acidity.

My chocolate cream cheese frosting turned out lumpy. What went wrong and how can I prevent it?

Lumpy cream cheese frosting is almost always a result of cold butter and cream cheese. These ingredients must be at true room temperature to blend smoothly and homogeneously. Cold butter and cream cheese will not properly emulsify, leading to frustrating lumps. To prevent this, ensure your butter and cream cheese sit out on the counter for at least 1-2 hours before you begin making the frosting. If you’re short on time, you can gently microwave the butter in 10-second intervals until slightly softened (not melted) and very carefully soften cream cheese in its wrapper. Or, beat them separately until smooth before combining. Patience with room temperature ingredients is key to a perfectly smooth frosting!

Ingredients

For the Chocolate Cherry Cake

  • ¾ cup Dutch-processed cocoa powder
  • 2 ¾ cups all-purpose flour
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups granulated sugar
  • ¾ cup vegetable oil or another neutral oil
  • ¼ cup coffee brewed and cooled
  • 21 ounces cherry pie filling canned or homemade

For the Chocolate Cream Cheese Frosting

  • 10 ounces cream cheese room temperature, full-fat block
  • ½ cup unsalted butter room temperature
  • 1 cup powdered sugar
  • Pinch kosher salt
  • 6 tablespoons Dutch-processed cocoa powder
  • ¼ teaspoon vanilla extract

Instructions

To prepare the cake:

  1. Preheat the oven to 350°F (175°C) conventional (no fan). Spray a rectangular cake pan with nonstick cooking spray and place a piece of cut parchment paper in the bottom for easy release.
  2. In a medium bowl, whisk together the cocoa powder, flour, salt, baking powder, and baking soda until well combined. Set aside.
  3. In a large mixing bowl, whisk the room temperature eggs, vanilla, and granulated sugar until smooth and slightly frothy. Gradually whisk in the vegetable oil until the batter is emulsified and smooth.
  4. Whisk the cooled coffee into the egg mixture. Then, add the dry ingredients to the wet and gently fold with a silicone spatula until no dry lumps remain. Be careful not to overmix.
  5. Gently fold in the cherry pie filling until it is evenly distributed throughout the batter.
  6. Pour the batter into your prepared pan. Smooth the top with an offset spatula and bake in the preheated oven.
  7. Bake until a cake tester inserted into the center comes out with a few clinging crumbs and the center provides a little resistance when pressed lightly with your finger. Baking time for a rectangular dish is typically 40-45 minutes (mine took 44 minutes). For three 8-inch cake pans, it’s about 32 minutes. For two 9-inch pans, expect 35-40 minutes.
  8. If using round cake pans, allow the cakes to cool for 5 minutes in the pans, then flip them out onto a wire rack. Carefully remove the parchment paper from the bottoms and allow them to cool completely before flipping back over.
  9. If baking a rectangular one-layer cake, simply let it cool completely on a wire rack while still in the cake pan. Ensure it’s fully cooled before frosting.

Prepare the buttercream:

  1. In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl with an electric hand mixer), beat the room temperature butter and cream cheese together until perfectly homogeneous and smooth.
  2. Sift the cocoa powder and powdered sugar directly into the bowl. Mix on low speed until combined, then add the kosher salt and vanilla extract. Beat until smooth, tasting and adjusting vanilla or salt as desired.
  3. Switch to the whisk attachment and beat on medium-high speed until the frosting is lightened and fluffier, about 1-2 minutes. For an even lighter topping, you can add ¼–½ cup cold heavy whipping cream and beat until stiff peaks form.

Assemble the cake:

  1. Scoop the chocolate cream cheese frosting onto the top of the completely cooled cake. Spread it out evenly with a large offset spatula. Create decorative swirls using the tip of your offset spatula if desired. Finish by topping with chocolate shavings or additional cherries.

Notes

Yield: This recipe is perfectly portioned for one 9×13 inch sheet cake, two 9-inch round cake layers, or three 8-inch round cake layers.
Presentation: For the cleanest, most professional-looking slices, refrigerate your cake for at least an hour before cutting. You can also use a warm, dry knife for an extra-smooth cut. Feel free to remove the cake from the pan, slice it, and then place it back in the pan for easy transport or storage.
Flavor Tips: While the cake itself is delicious at any temperature, the chocolate cream cheese frosting truly shines when served at room temperature, allowing its full flavor and creamy texture to develop.
Technique: Always ensure your cream cheese and butter are at proper room temperature for the frosting. This is crucial for achieving a lump-free, smooth, and perfectly emulsified buttercream.
Storage: Store the cake, tightly covered, at room temperature for up to 3 days. Alternatively, refrigerate it for up to 5 days. For longer preservation, the frosted cake freezes beautifully for up to 2 months. Wrap it tightly in plastic wrap, then in aluminum foil, before freezing. Thaw overnight in the refrigerator before serving.
