The Black Tie Mousse Cake is an Olive Garden favorite and a chocolate lover’s dream. It combines four complementary layers that deliver texture and intense chocolate flavor:

- Chocolate ganache frosting
My version is inspired by Olive Garden’s dessert and designed to be easier to prepare at home while maintaining the same indulgent spirit. I replace the classic custard mousse with a stabilized vanilla cheesecake-style mousse to keep the cake lighter and balanced against the rich ganache and cake layers.

Make the chocolate cake base
The cake is a compact chocolate layer adapted for a 9-inch springform pan. Using a mix of regular and dark cocoa deepens the chocolate color and flavor, but natural unsweetened cocoa works fine. Full ingredient amounts and step-by-step instructions are available in the recipe card below.
- Preheat the oven to 350°F. Lightly grease a 9-inch springform pan and set aside.

- Sift sugar, flour, cocoa, baking powder, baking soda and salt into a large bowl.
- Add egg, milk, oil and vanilla and stir until combined.
- Heat 1/4 cup water until boiling and add to the batter, mixing until uniform. The batter will be thin but even.
- Pour into the prepared pan and bake 15–18 minutes, or until a toothpick comes out clean or with a few moist crumbs. Chill the cake in the freezer to cool quickly.
Make the vanilla and chocolate cheesecake fillings
Prepare the two cream cheese mixtures first, then fold in stabilized whipped cream to create mousse. This keeps steps tidy and reduces dishwashing.

- Vanilla cream cheese: Beat cream cheese, powdered sugar, salt and vanilla until smooth.
- Chocolate cream cheese: Beat cream cheese with sifted powdered sugar, cocoa, salt and vanilla until smooth.
Make the stabilized whipped cream
Gelatin stabilizes the whipped cream so the mousses stay light and hold their shape without freezing.

- Bloom gelatin in cold water for 5 minutes.
- Whip cold heavy cream until it thickens but before soft peaks form.
- Microwave the gelatin briefly to dissolve, then drizzle into the whipping cream while mixing on low. Increase speed and whip to stiff peaks. Be careful not to over-whip.
Add whipped cream to make the mousses
Divide the stabilized whipped cream between the vanilla and chocolate cream cheese mixtures, folding or briefly mixing to combine. This produces two silky mousse layers.

- Place half the whipped cream into the vanilla mixture and half into the chocolate. Blend gently until smooth and airy.
Assemble the layers

- Remove the chilled chocolate cake from the freezer.
- Spread the chocolate mousse evenly over the cake, then top with the vanilla mousse and smooth gently.
- Cover without touching the top and refrigerate at least 1 hour to set.
Make the ganaches
- After the mousse sets, remove the springform ring and return the cake on its base to the fridge.
- Separate semi-sweet and white chocolate chips into bowls.

- Warm heavy cream and butter on low until it just boils, then pour most over the semi-sweet chips and a small portion over the white chips.
- Stir until smooth and let both ganaches cool to a spreadable consistency. Reserve 1/2 cup of the semi-sweet ganache and transfer the white ganache to a piping bag.

Frost with chocolate ganache

- Place the cake on a cooling rack set over a sheet pan. Pour the semi-sweet ganache over the top and spread evenly with an offset spatula.
- Allow ganache to drip over the edges and smooth around the sides. Use the reserved ganache for piping the border later.
Decorate the cake
The signature top pattern comes from weaving the dark and white ganaches together.

- Pipe horizontal stripes of white ganache across the top, about an inch apart.
- Run a toothpick through the stripes vertically, alternating directions to create a marbled effect.
- Press mini chocolate chips onto the sides while the ganache is still tacky.
- Fill a piping bag with the reserved semi-sweet ganache fitted with an open star tip and pipe a border around the edge (a reverse shell or similar pattern works well).

Chill until set
Refrigerate the fully decorated cake until the ganache firms, at least 15–20 minutes or longer for a firmer finish.
Storing and freezing
Store the cake lightly covered in the refrigerator for up to 5–7 days.
To freeze: Chill the unwrapped cake in the freezer for 1 hour, then wrap it in two layers of plastic wrap and a layer of foil. Freeze up to 3 months. Thaw in the refrigerator overnight after removing the foil and one layer of plastic.

- 4 oz (113 g) cream cheese, room temperature
- ¾ cup (90 g) powdered sugar
- Pinch of salt

Chocolate Cream Cheese
- 4 oz (113 g) cream cheese, room temperature
- ¾ cup (90 g) powdered sugar
- ¼ cup (20 g) unsweetened cocoa powder
