My older kids are heading back to school this week — a third grader and a first grader. That always makes me think about school lunches and the little treats that made childhood lunches special. One of my favorites growing up (right after peanut butter fingers) was frosted fudge brownies. I’m a total chocoholic, and honestly, who could resist these?

There’s something irresistible about a dense, fudgy brownie. Add a smooth chocolate frosting on top and you’ve reached peak dessert territory. These frosted fudge brownies deliver rich chocolate flavor and a tender, gooey texture that keeps you coming back for more. I get excited just thinking about them.

Brownies are wonderfully versatile, and I’m already imagining variations — different mix-ins, swirls, or even using that luscious frosting on cookies or cupcakes. But for now, I’m sticking with the classic: a thick chocolate brownie base covered in creamy fudge frosting. Pure bliss.

Frosted Fudge Brownies
Ingredients
Brownies:
- 1 cup (226 g) unsalted butter (2 sticks)
- 2 cups (400 g) granulated sugar
- 2 tsp vanilla extract
- 4 large eggs
- 3/4 cup (60 g) cocoa powder
- 1 cup (120 g) all-purpose flour (stir, spoon, & level)
- 1/2 tsp baking powder
- 1/2 tsp salt
Frosting: (Makes 1 2/3 cups)
- 6 Tbsp (85 g) unsalted butter, softened
- 6 Tbsp cocoa powder
- 2 Tbsp light corn syrup or honey
- 1 tsp vanilla extract
- 2 cups (240 g) powdered sugar
- 2 to 4 Tbsp milk
- Pinch of salt
Instructions
- Heat oven to 350°F (175°C). Grease a 13×9-inch baking dish.
- In a large microwave-safe bowl, melt the butter. Stir in the sugar and vanilla. Add eggs one at a time, mixing well after each addition. Stir in the cocoa until fully combined. Add flour, baking powder, and salt; mix until smooth. Pour batter into the prepared baking dish.
- Bake 30 to 45 minutes depending on your pan (metal vs glass) or until a toothpick inserted in the center comes out almost clean and the edges start to pull away from the pan. Cool completely.
- For the frosting: Using an electric mixer, beat the softened butter, cocoa powder, corn syrup (or honey), and vanilla in a large bowl. Add the powdered sugar, 2 tablespoons milk, and a pinch of salt; beat until combined. Add additional milk a tablespoon at a time until the frosting reaches a spreadable consistency. Spread over cooled brownies. Cut and serve. Store leftovers covered at room temperature.
