Sweet homemade biscuits, sugared strawberries, and fresh whipped cream are all you need for this classic biscuit strawberry shortcake. Simple, quick, and delicious.

What is Strawberry Shortcake made of?
Strawberry shortcake has three main components:
- Shortcake — usually a biscuit or occasionally a sponge/cake.
- Whipped cream — heavy cream whipped with a bit of sugar.
- Strawberries — sweetened so they release their juices and form a syrup.
It’s a straightforward dessert that looks as good as it tastes and comes together quickly when strawberries are in season.

Why is it called Shortcake?
The term “shortcake” comes from the word “short,” which describes a dough rich in fat that limits gluten development. The result is a crumbly, tender layer — essentially a biscuit. Some versions use a sponge or cake, but the traditional, true shortcake is a biscuit-like, flaky pastry.

Biscuit Strawberry Shortcake Recipe
This recipe shows the classic version made with sweetened biscuits, macerated strawberries, and freshly whipped cream. The full ingredient list and instructions follow in the recipe card below.
For the Strawberries
Rinse, hull, and slice or dice about 1 pound (454 g) of strawberries. Toss with 1/3 cup (68 g) granulated sugar, cover, and refrigerate for at least 30 minutes to 1 hour. The sugar will draw out the juices, creating a sweet syrup that enhances the berries’ flavor.

For the Biscuits
These biscuits use cold butter for the best flavor and texture. Work quickly so the butter stays cold, or chill the formed biscuits briefly before baking to encourage tall, flaky layers.

- In a large bowl, stir together 2 cups (240 g) all-purpose flour, 1/3 cup (68 g) granulated sugar, 1 tablespoon baking powder, and 1 teaspoon salt.
- Add 1/2 cup (113 g) cold unsalted butter (cut into tablespoons) and cut it into the dry ingredients with a pastry blender until the mixture resembles coarse crumbs.
- Stir in 3/4 cup (177 ml) cold buttermilk until the dough begins to clump.
- Turn the dough onto a lightly floured surface, press the crumbs together, and roll into a 6×9-inch rectangle. Cut into thirds and stack, then roll again to a 6×9-inch rectangle about 1 inch thick to build layers.
- Cut 6 biscuits using a 2 1/4- to 2 1/2-inch round cutter. Gather scraps gently to form 2–3 more biscuits without overworking the dough.
- Place biscuits several inches apart on a parchment- or silicone-lined baking sheet and bake at 450°F for 10–12 minutes, until golden brown. Cool completely on the tray.

For the Whipped Cream
Chill a bowl and whisk if possible. Whip 1 cup (237 ml) heavy cream with 1/4 cup (30 g) powdered sugar on high in a stand mixer or with a hand mixer until medium-stiff peaks form. If you need extra stability for piping or longer hold time, use a stabilized whipped cream variation.

Assemble the Biscuit Strawberry Shortcakes
Split the cooled biscuits in half. Spoon whipped cream on the bottom half, top with macerated strawberries and a little of their syrup, then finish with another dollop of cream and the biscuit top. Serve immediately so the biscuits stay flaky rather than soggy.

Make-Ahead and Storage Instructions
Do not assemble shortcakes ahead of time. The biscuit will absorb moisture and become soggy. Instead, prepare components in advance and store separately:
- Biscuits — Store in an airtight container in the refrigerator for up to 5 days, or at room temperature for up to 3 days.
- Strawberries in syrup — Refrigerate in an airtight container for 3–4 days.
- Whipped cream — Keeps up to 48 hours refrigerated; gently stir before using. Stabilized whipped cream will keep 4–5 days.
