These banana bread overnight oats capture that warm, familiar taste while staying light and portable. I usually skip nuts in banana bread, but pecans add a welcome crunch and depth to this breakfast bowl.

Banana Bread Overnight Oats

Ingredients

  • 1 ½ bananas
  • ⅔ cup (54 g) old fashioned oats
  • ½ cup (510 g) plain nonfat Greek yogurt
  • 1 ½ Tbsp chia seeds
  • ⅔ cup (159 ml) milk, any variety
  • ½ tsp ground cinnamon
  • 2 Tbsp pecans, chopped

Instructions

  • Mash 1 banana with a fork in a large bowl. Add the oats, yogurt, chia seeds, milk, and cinnamon. Stir until combined.
  • Divide the mixture between two half-pint (1-cup) jars. Cover and refrigerate overnight (or at least 4–6 hours) so the oats soften and thicken.
  • Top each jar with sliced banana (use about half a banana) and 1 tablespoon of chopped pecans before serving. Enjoy chilled.
