Ingredients for Lemon Cupcakes

This recipe uses standard baking pantry items and fresh lemon. You will need:

How to Make Lemon Cupcakes From Scratch

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (118 g) oil (canola or vegetable)
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1/3 cup (80 ml) fresh lemon juice (about 2 lemons)
  • 4 tsp lemon zest (about 2 lemons)
  • Yellow food coloring, optional
  • 1/2 cup (112 g) buttermilk*

Whipped Cream Cheese Frosting:

  • 8 oz (226 g) brick cream cheese, cold
  • 1 1/2 cups (180 g) powdered sugar
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 cups (355 ml) heavy whipping cream, cold

Instructions
