These homemade buttermilk pancakes are fluffy, tender, and simple enough to make any morning.

I’ve used mixes for convenience for years, but these from-scratch buttermilk pancakes won me over. The recipe I tried is a reliable classic and comes together quickly—only a few extra minutes compared with boxed mixes—and the result tastes fresher and more satisfying. The batter is thick and puffs up on the griddle, producing pancakes that are light and springy when you press them with a fork.

These pancakes have a melt-in-your-mouth texture and a gentle tang from the buttermilk. Serve them with fresh berries and honey, or drizzle with maple syrup. A buttered syrup or flavored butter syrup also complements their rich, tender crumb.

Below is the full recipe with ingredient amounts and simple instructions so you can make a stack at home.

Ingredients
- 2 cups (240 g) all purpose flour, (stir, spoon, & level)
- 1 tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
- 2 Tbsp granulated sugar
- 2 large eggs
- 2 cups (473 ml) low-fat buttermilk
- 2 Tbsp (28 g) unsalted butter, melted
Instructions
-
Sift the flour, salt, baking powder, baking soda, and sugar into a large bowl and whisk to combine.
-
In a separate bowl, whisk the eggs and buttermilk together. Stir in the melted butter while whisking.
-
Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spoon or spatula until just combined. Do not overmix—a few streaks of flour are fine.
-
Preheat a griddle or skillet over medium-high heat (about 325–350°F on a griddle). Lightly grease the surface. Spoon about 1/3 cup batter per pancake onto the hot pan. Cook 1–2 minutes until the underside is golden and bubbles form on top, then flip and cook another 1–2 minutes until cooked through. Serve warm with your favorite toppings.
