St. Patrick’s Day is just around the corner, and here’s a simple, festive treat the whole family will enjoy: Pot of Gold Popcorn. It’s playful, crunchy, and perfect for kids — and adults may find it hard to resist.
Instead of plain buttered popcorn or traditional caramel corn, this version is candied with mango Jello for a sunny, golden glaze. The coating combines dry Jello with sweetened condensed milk, producing a shiny, sweet shell that crisps up in the oven. It’s easy to make and delightfully addictive.

This recipe is straightforward, but it can get a little messy when pouring and stirring the hot candy mixture, so line your pans with heavy-duty foil and use silicone spatulas for easier cleanup. To complete the St. Patrick’s Day theme, I added colorful Skittles to represent the rainbow—after all, there’s supposed to be a pot of gold at the rainbow’s end. The result is crunchy, sweet, and festive.

My kids loved this snack, and I’m already planning to try other Jello flavors to create different colored candied popcorns. The mango Jello gives a warm golden hue and a bright, fruity note, while the condensed milk helps the coating set up glossy and crisp. Serve it in bowls or bag it in clear treat bags for a fun holiday giveaway.

Pot of Gold Popcorn
Ingredients
- 12 cups air popped popcorn, (about ½ cup + un-popped kernels)
- 1 (14oz) can sweetened condensed milk
- 1 (3oz) box Mango Jello, (or another golden-flavored Jello such as lemon or pineapple)
- Skittles
Instructions
-
Preheat the oven to 300˚F. Line a large shallow roasting pan or two jelly roll pans with heavy-duty foil, letting the foil extend over the edges. Butter the foil or spray it well with nonstick spray.
-
Pop the popcorn and remove any un-popped kernels. Spread the popcorn evenly on the prepared pan(s) and keep it warm in the oven while you prepare the candy coating.
-
In a medium saucepan, combine the sweetened condensed milk and the dry Jello powder. Heat over medium, whisking constantly until the mixture thickens slightly and becomes bubbly, about 4 to 5 minutes. Stir continuously to prevent burning. After cooking, soak the pan in hot water right away for easier cleanup.
-
Pour the hot Jello-condensed milk mixture over the popcorn. Gently stir with a long-handled wooden spoon or silicone spatula until the popcorn is evenly coated.
-
Bake for 20 minutes, stirring every 5 minutes, until the coating is mostly set and not gooey. If using two pans, switch their positions on the oven racks each time you stir so they bake evenly.
-
Remove the pans from the oven and stir once more to loosen the popcorn from the foil. Let the popcorn cool completely, then break it into clusters or bite-sized pieces.
-
Toss in Skittles to add rainbow color and a chewy contrast, then serve and enjoy.
