Cook Sweet Potatoes:
- Peel and cut your sweet potatoes into 1-inch cubes. It doesn’t have to be exact, but roughly the same size ensures even cooking. Place them in a small saucepan and cover with cold water. Bring to a boil over high heat, then reduce to medium and continue to cook until they are very tender and can be easily pierced with a fork. Drain thoroughly and mash with a spoon, puree with an immersion blender, or press through a ricer for the smoothest texture (my favorite method, as it helps remove some of the fibrous strings).
