- 1 Tbsp olive oil
- 1 medium red onion, diced
- 4 cloves garlic, minced (about 2 tsp)
- 28 oz can crushed tomatoes
- 8 oz can tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp garlic powder
- ½ cup half & half
- 10 oz bag fresh spinach, thinly sliced
- 12 oz pasta (such as penne, rotini, or ziti)
- 12 oz package Kielbasa or Turkey/Chicken Sausage, halved lengthwise, and sliced ¼” thick
- 2 cups shredded mozzarella, divided
- ½ cup shredded parmesan

In a large stock pot or Dutch oven, heat the olive oil over medium heat. Add the diced red onion and sauté until it becomes translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Pour in the crushed tomatoes and tomato sauce. Add the dried oregano, dried basil, and garlic powder. Stir well to combine. Bring the sauce to a gentle simmer, then reduce heat to low.
