This meaty, cheesy, sloppy joe bake is pure comfort food in a casserole.

If you love sloppy joes, this casserole is a delicious twist on the classic sandwich. It combines seasoned ground beef in a tangy sauce with layers of melted cheese, all baked between two soft, crisped bread crusts. The result is hearty, warm, and easier to eat than a messy sandwich—yet every bite still delivers that familiar sloppy joe flavor.

The distinctive feature of this bake is that the bread forms both a bottom and top crust around the filling. That adds a pleasant contrast in texture: a lightly crisp exterior with soft, pillowy bread inside. Generous amounts of mozzarella are layered above and below the meat so the filling stays creamy and the bottom crust resists becoming soggy. The cheese also creates irresistibly gooey, melty pockets throughout the casserole.

This version is less messy to serve than a traditional sloppy joe sandwich, which makes it a great family or weeknight dinner. You can slice it and serve with a fork, or let everyone dig in with napkins at the ready. Either way, the combination of seasoned beef, tomato-based sauce, and melted cheese is comfort-food perfection.

I used Rhodes yeast dinner rolls for both the bottom and top crust because they provide a homemade texture without the extra work. The rolls are easy to shape into a crust and bake up beautifully, which simplifies assembly and shortens prep time.
Enjoy this sloppy joe bake when you want a crowd-pleasing casserole that combines the best parts of a sandwich and a pie—meaty, saucy, and loaded with cheese. It’s a perfect dish for cooler weather and for feeding a hungry group.

Sloppy Joe Bake
Ingredients
- 14 Rhodes Yeast Dinner Rolls, thawed to room temperature
- 2 ½ pounds lean ground beef
- ½ cup onions, finely diced
- 30 oz canned sloppy Joe sauce (two 15 oz cans)
- 4 cups grated mozzarella cheese
- Chili powder, for sprinkling
Instructions
-
Lightly spray a countertop with non-stick cooking spray. Combine 8 rolls and roll into a 10 x 14-inch rectangle. Cover with plastic wrap and let rest.
-
Brown the ground beef with the diced onions and drain any excess fat. Stir in the sloppy Joe sauce and simmer for a few minutes to combine flavors.
-
Remove the plastic wrap from the dough and press it into the bottom of a sprayed 9 x 13-inch baking pan. Prick the dough several times with a fork to prevent bubbling. Pre-bake at 350°F for 15 minutes.
-
While the bottom crust bakes, combine the remaining 6 rolls and roll into a 10 x 14-inch rectangle for the top crust. Cover and let rest until ready to use.
-
Sprinkle 2 cups of grated mozzarella over the baked bottom crust. Spread the meat mixture evenly over the cheese, then top with the remaining 2 cups of cheese.
-
Remove the plastic wrap from the top crust and place it over the cheese. Cut slits at regular intervals to vent steam and sprinkle lightly with chili powder.
-
Bake at 350°F for about 20 minutes, or until the filling is bubbly and the top crust is golden brown. Let rest a few minutes before slicing and serving.
