This noodle recipe has been passed down from my grandmother to my mother and now to me. As a child I loved these fresh, tender noodles in a warm bowl of chicken soup. They’re simple to make, but nothing compares to homemade noodles floating in a savory broth — plump, satisfying and full of comfort.

Ingredients

Noodles:

  • 2 large eggs
  • 1 tsp salt
  • ¼ cup milk
  • 1 ½ – 2 cups all-purpose flour

Soup:

  • 2 Tbsp extra virgin olive oil
  • ½ large onion, chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 2 cups shredded cooked chicken, (rotisserie works well)
  • 8 cups chicken broth
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 ½ tsp dried thyme

Instructions

 

  • Make the noodles: whisk together the eggs, 1 tsp salt and the milk. Add just enough flour to form a stiff dough. Roll the dough very thin into a rectangle and slice into 1/8–1/4″ strips with a pizza cutter. The thinner you slice, the better, as the noodles will puff up when cooked. Let them rest while you prepare the soup.
  • Prepare the soup: in a large stockpot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, diced celery and minced garlic. Sauté about 10 minutes, until the vegetables are softened.
  • Add the shredded chicken, chicken broth, ½ tsp salt, ¼ tsp black pepper and the dried thyme. Bring the soup to a boil. When boiling, add the noodles a few at a time so they don’t clump. After all the noodles are in the pot, reduce the heat and simmer about 10 minutes, until the noodles are cooked through. Remove from heat and serve hot.
