As part of that routine I began eating many fruit-and-vegetable-packed salads, and I wanted a lighter, fruit-forward dressing to switch things up. That’s how this Strawberry Balsamic Vinaigrette was born.

Strawberries are abundant and affordable in summer, so I often keep a stash in the fridge. I wanted a dressing that combined fresh fruit flavor with the bright acidity of balsamic and a touch of creaminess from yogurt. The result is a vibrant, versatile vinaigrette that brightens simple greens, grain bowls, or even grilled chicken.

When I entered the recipe into my favorite calorie tracker, the numbers worked out so that 2 tablespoons equal roughly 13 calories, making this an excellent low-calorie option if you want to dress your salad generously without worrying about the numbers.

Strawberry Balsamic Vinaigrette

cups dressing, or 16 servings (2 Tbsp each)

Ingredients

  • 2 cups
    whole strawberries, rinsed and stems removed
  • ⅓ cup
    vanilla Greek yogurt
  • 2 Tbsp
    diced red onion
  • ⅓ cup
    balsamic vinegar
  • ¼ tsp
    ground black pepper
  • ½ tsp
    sea salt
  • ½ tsp
    dried basil

Instructions

  • Place all ingredients into a food processor or blender.
  • Blend until smooth, scraping the sides as needed.
  • Keep refrigerated and use within 7–10 days.
