These Peanut Butter Stuffed Chocolate Cookies are soft and indulgent, but use peanut powder for less fat, without compromising taste!

Yields: 16 large cookies

Ingredients

  • 1 ½ cups (180 g) all-purpose flour (up to ¼ cup extra if needed)
  • ½ cup (40 g) unsweetened cocoa powder
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup (113 g) butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) light brown sugar, gently packed
  • ¼ cup (24 g) Jif Peanut Powder
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • 1 large egg

For the Peanut Butter Filling:

  • ¾ cup (72 g) Jif Peanut Powder
  • ¾ cup (90 g) powdered sugar
  • ¼ tsp salt
  • 3 ½ Tbsp water

For Coating:

  • ¼ cup (30 g) granulated sugar

Instructions

  1. In a medium bowl, combine the flour, cocoa, salt, and baking soda. Set aside.
  2. In the bowl of a stand mixer, cream the softened butter with both granulated and light brown sugars using the paddle attachment until light and fluffy.
  3. In a separate small bowl, reconstitute ¼ cup of Jif Peanut Powder with 2 tablespoons of water, stirring until smooth. Add this mixture to the butter-sugar mixture and mix until fully incorporated.
  4. Beat in the vanilla extract and the large egg, mixing well until thoroughly combined.
  5. Gradually add the dry ingredients (flour, cocoa, salt, baking soda mixture) into the wet ingredients. Mix on low speed until just incorporated, being careful not to overmix. The dough should be soft but not overly sticky. If it feels too sticky, add an extra ¼ cup of all-purpose flour, one tablespoon at a time, until the desired consistency is reached.

  13. Gently flatten the stuffed cookie dough ball until it is about ½-inch thick.
  14. Pour ¼ cup of granulated sugar onto a small plate. Roll the top and sides of each shaped cookie in the sugar to coat.
  15. Place the coated cookies onto the prepared baking sheet, leaving about 1 inch of space between each cookie. Repeat the process with the remaining dough and filling pieces.
