When Valentine’s Day ends I always look forward to sharing green and lime-forward treats. These Key Lime Muddy Buddies are quick to make and deliver a true lime punch thanks to lime gelatin powder and a dusting of confectioners’ sugar. White chocolate chips give the mix a creamy sweetness reminiscent of sweetened condensed milk, while Golden Grahams add the graham-cracker crust element.

I like a pronounced lime flavor, so I use a full box of lime gelatin powder (not sugar-free) and a bit of extra powdered sugar to ensure every piece is bright and sweet. If your melted white chocolate seems too thick, a teaspoon of coconut oil or shortening helps thin it for easier coating.

Key Lime Muddy Buddies

Yields: 12 servings
Ingredients
- 12 oz (340 g) white chocolate chips (about 2 cups)
- 1 tsp coconut oil or shortening (optional, for thinning)
- 9 cups (270 g) Chex cereal
- 6 oz (170 g) large box lime gelatin powder (not sugar-free)
- 3/4 cup (90 g) powdered sugar
- 2 cups (84 g) Golden Grahams cereal
- Lime zest, optional (for color)
Instructions
- Place white chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between, until fully melted (about 1½ minutes). If needed, add 1 tsp coconut oil or shortening to thin the chocolate for easier coating.
- Put the Chex cereal in a large bowl. Pour the melted white chocolate over the cereal and fold gently until the pieces are evenly coated.
- Combine the lime gelatin powder and powdered sugar in a large zip-top bag. Add half the chocolate-coated cereal to the bag, seal, and shake until coated. Empty the coated cereal into a serving bowl and repeat with the remaining cereal.
- Fold the Golden Grahams into the coated cereal so they mix through. If desired, sprinkle with a little lime zest for extra color and aroma. Serve immediately or store in an airtight container or zip-top bag.
