
These mint brownies are an easy, festive treat—perfect for St. Patrick’s Day or any time you want a fun, minty dessert. Kids especially love the bright green icing, and you can use your favorite boxed brownie mix or a reliable homemade brownie recipe. I ended up with a thicker-than-usual layer of icing because my batter wasn’t spread evenly, but the extra mint topping looked beautiful and disappeared quickly, so don’t be afraid to be generous with the frosting.

Ingredients
Brownies:
- 18.3 oz (520 g) box family size brownie mix, (for a 13×9″ pan)
- Ingredients for brownies listed on the box, (ex: water, eggs, oil)
Mint Icing:
- 1 cup (226 g) butter, (2 sticks) room temperature
- 2 ½ cups (300 g) powdered sugar
- 1 Tbsp milk
- ½ tsp mint extract
- Wilton Leaf Green Food Coloring
Chocolate Icing:
- 1 cup (170 g) semi-sweet chocolate chips
- ¼ cup (59 ml) milk
- 2 Tbsp (28 g) butter
- ½ tsp vanilla extract
- 1 cup (120 g) powdered sugar
Instructions

Prepare and bake the brownies according to the box directions, or your chosen recipe, using a 13×9″ pan. Allow the brownies to cool completely before frosting.

Make the mint icing: In a medium bowl, beat the room-temperature butter until fluffy. Gradually add the powdered sugar, then mix in the milk and mint extract. Add a small amount of green food coloring until you reach the desired shade—a little goes a long way. Mix until smooth and spread the mint icing over the cooled brownies.

Make the chocolate icing: In a microwave-safe bowl, heat the chocolate chips, milk, butter, and vanilla for 30–40 seconds. Whisk until the chocolate is fully melted, then whisk in the powdered sugar to form a smooth glaze. Pour the warm chocolate icing over the mint layer and spread gently with a spatula.

Chill the brownies in the refrigerator or freezer until the chocolate icing sets, about 15–30 minutes. Cut into squares and serve.
