Ingredients

  • ½ cup (118 ml) 2% milk
  • 2 Tbsp (28 g) butter
  • ½ cup (118 ml) warm water
  • 1 ½ tsp rapid rise yeast
  • 1 ½ Tbsp granulated sugar
  • 1 tsp salt
  • 2 ¾ to 3 cups (330-360 g) King Arthur Flour All-Purpose Flour, (stir, spoon & level)
  • 1-2 Tbsp cornmeal

Instructions

  • Gently heat the milk and butter in a saucepan or microwave just until the butter is melted. Transfer to the fridge to cool until it is merely warm, not hot. This ensures it won’t kill the yeast.
  • While the milk cools, in a separate bowl, dissolve the rapid rise yeast and granulated sugar into ½ cup of warm water. Allow this mixture to sit undisturbed for about 5 minutes, or until it becomes bubbly and frothy, indicating the yeast is active.
  • Combine the cooled milk mixture with the activated yeast mixture. Stir in the salt, then gradually add the King Arthur All-Purpose Flour, a little at a time, until the dough comes together and forms a ball. Turn the dough out onto a lightly floured surface. With hands lightly greased with oil, knead the dough for approximately 5 minutes. The dough should become smooth and elastic, indicating that the gluten has properly developed. Cover the dough with a clean kitchen towel and let it rest for 10 minutes.
  • Prepare a baking sheet by lining it with parchment paper and sprinkling it generously with cornmeal. On a lightly floured surface, roll out the rested dough to a thickness of about ½ inch. Carefully place the risen English muffins onto the hot skillet, ensuring not to overcrowd it. Cook for 6-8 minutes per side, until they are beautifully golden brown and cooked through. The low heat is crucial to allow them to cook internally without burning the exterior. Once cooked, transfer the English muffins to a wire rack to cool completely.
