If there’s one holiday treat I make every year, it’s peanut butter balls — also known as buckeyes. Think of them as homemade Reese’s in ball form, only better. They’re simple to make and reliably delicious.

For those who don’t consider themselves candy makers, peanut butter balls are an easy way to join the holiday candy-making fun — they’re practically foolproof.

To give them a new spin I added mini pretzels and created Peanut Butter Pretzel Bites. The pretzels introduce a touch of salt and a satisfying crunch — like a tiny sandwich of pretzel, peanut butter, and chocolate.


Pretzels boost both flavor and texture, balancing the sweetness and adding a crisp bite. These little treats are perfect for sharing — though you might want to keep a few for yourself.

Peanut Butter Pretzel Bites

Ingredients
- 1 ½ cups (396 g) creamy peanut butter
- ½ cup (113 g) butter, room temperature
- 1 tsp vanilla extract
- ½ tsp salt
- 3 cups (360 g) powdered sugar
- Mini pretzels (about 150)
- 12 oz (340 g) semi-sweet chocolate chips
- 2 Tbsp (28 g) coconut oil or shortening
Instructions
- Combine peanut butter, butter, vanilla, and salt in a large bowl. Beat on low with an electric mixer until blended.
- Add 2 cups powdered sugar and beat until combined, then beat in the last cup of powdered sugar.
- Form 1-inch balls. Sandwich each ball between two mini pretzels to create bite-sized sandwiches. Place on baking sheets lined with parchment or a silicone mat. Freeze 15 minutes or refrigerate 30 minutes.
- Melt chocolate chips with coconut oil or shortening in a double boiler or a heat-safe bowl over simmering water (make sure the water doesn’t touch the bowl). Stir until smooth.
- Dip each pretzel bite halfway into the chocolate, letting excess drip off. Return to the tray and chill until the chocolate sets, about 15 minutes. Store in an airtight container in the refrigerator up to 7 days.
