Ingredients

  • 3 lbs beef roast, cut into 2-inch cubes (chuck roast or bottom round recommended)
  • 2 Tbsp oil, divided (olive, vegetable, or canola oil)
  • 4 tsp low-sodium steak seasoning, divided
  • 1 large onion, thinly sliced
  • 1 Tbsp worcestershire sauce
  • 1 ½ cups low-sodium beef broth
  • sub rolls, hoagie rolls, or crusty baguettes
  • provolone cheese slices
  • butter or garlic butter, for toasting rolls (optional)

Instructions

 

  1. Prepare your ingredients: thinly slice the large onion and cut the beef roast into approximately 2-inch cubes. Set your Instant Pot to the “Sauté” function on high heat. Add 1 tablespoon of oil to the hot pot. Once the oil is shimmering, add the sliced onions and 2 teaspoons of the steak seasoning. Cook, stirring occasionally, until the onions begin to soften, brown, and caramelize, which should take about 5-7 minutes. Once caramelized, remove the onions from the Instant Pot with a slotted spoon and set them aside.
  2. Add the remaining 1 tablespoon of oil to the Instant Pot. Add the cubed beef roast along with the remaining 2 teaspoons of steak seasoning. Stir the beef just enough to sear it lightly on all sides, creating a nice crust. This step should only take a few minutes. Next, return the caramelized onions to the pot, then pour in the worcestershire sauce and the low-sodium beef broth.
