  • ½ cup (118 ml) oil, (canola/vegetable)
  • ½ cup (120 g) sour cream, (or plain Greek yogurt or applesauce)
  • 2 large eggs, room temperature
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (170 g) grated carrots

  • 8 oz (226 g) cream cheese, cold
  • ½ cup (113 g) butter, (1 stick) room temperature
  • 1 cup (120 g) powdered sugar
  • 1 tsp vanilla extract
