It’s the 20th of the month, which means the Surprise Recipe Swap is back. This month I cooked a savory recipe from Dawn at Spatulas On Parade: Philly Cheesesteak Sloppy Joes. My family doesn’t eat ground beef every week, but the name “Philly Cheesesteak” is irresistible. These sandwiches are quick to make, full of flavor, and delightfully messy—just what you want from a sloppy joe. Leftovers are excellent if you have any.

Philly Cheesesteak Sloppy Joes

Ingredients

  • 1 lb ground beef
  • 1 Tbsp olive oil
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 Tbsp cornstarch
  • 1 cup beef broth
  • ¼ cup A-1 steak sauce
  • 2 tsp peppercorn or Montreal steak seasoning
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • Sliced Provolone or Mozzarella
  • Hamburger buns

Instructions

  • 1. In a large skillet, brown the ground beef over medium-high heat. Drain excess fat and set the meat aside.
  • 2. In the same skillet, heat the olive oil and sauté the chopped onion and green pepper for about 4 minutes, until they begin to soften. Return the cooked beef to the pan.
  • 3. Whisk the cornstarch into the beef broth until smooth. Stir in the A-1 steak sauce, then add the mixture to the beef and vegetables. Add the steak seasoning, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally, until most of the liquid has thickened and been absorbed.
  • 4. If desired, toast the hamburger buns. Spoon the beef mixture onto each bun and top with a slice of provolone or mozzarella. For extra melty cheese, place a slice of cheese in the warm pan with a portion of the meat until it softens, then scoop the cheesy meat onto the bun.
