Refreshing Strawberry Lassi Recipe: Creamy Indian Yogurt Drink

Strawberry Lassi

Strawberries are ridiculously cheap right now, so I picked up a few pounds and have been experimenting with simple, fresh recipes. This strawberry lassi is pure and easy — just the sort of thing I enjoyed once at an Indian restaurant back in college. It’s refreshing and satisfying, especially when you want a sweet drink without much fuss.

At home I served this as a breakfast-style smoothie alongside peanut butter toast, but traditionally lassi is a cooling beverage for warm days and pairs well with lunch. The vanilla yogurt in this version adds creaminess and slight sweetness so you don’t need much extra sugar.

Ingredients

  • 1 pound strawberries, hulled & halved (half or quarter them if you have a small blender)
  • 2-4 Tbsp honey, I used 2 Tbsp; taste and add more if the berries are tart.
  • pinch salt
  • 2 cups vanilla Greek yogurt
  • 1 cup ice, crushed (use crushed if your blender is small)

Instructions

  • Place the hulled and halved strawberries in a blender with the honey and a pinch of salt. Blend until smooth.
  • Add the vanilla Greek yogurt and blend until fully combined and creamy.
  • Add the crushed ice and blend again until smooth and frothy. Serve immediately for best texture and flavor.
