If you’re searching for a cookie recipe that will impress, delight, and become a cherished favorite, look no further. This is one decadent treat you’ll find yourself baking time and time again.

The Irresistible Charm of Salted Caramel Cookies

While chocolate chip cookies have long held the crown in the world of homemade treats, it’s time to make way for a new contender: the utterly captivating Salted Caramel Cookie. This modern classic has swiftly captured hearts and taste buds globally, and for good reason. The magical combination of deep, caramelized sweetness and a sharp, savory kick from salt creates an explosion of flavor that is simply unparalleled. These cookies offer a sophisticated twist on traditional baking, proving that sometimes, the simplest additions make the biggest difference.

The allure of salted caramel lies in its ability to enhance and deepen the sweetness, preventing it from becoming cloying. The salt acts as a flavor amplifier, making the caramel notes sing louder and linger longer on the palate. When translated into a cookie, this means a dessert that is not only profoundly satisfying but also incredibly addictive. Each bite promises a harmonious blend of textures too – a tender, golden-brown exterior giving way to a soft, gooey center brimming with melted caramel. It’s a sensory journey that beckons you back for more.

From Local Bakery Gem to Your Kitchen: My Inspiration

My journey to perfecting these salted caramel cookies began with a local phenomenon in my college town. Late-night bakeries have become a massive trend, serving warm, freshly baked cookies until the wee hours – often midnight to 2 A.M. It’s genius marketing, especially for students burning the midnight oil, but who could resist the temptation of a warm, comforting cookie after a long day? Certainly not me! One particular shop, “Baked,” quickly became my absolute favorite, especially for their incredible salted caramel creations. Their cookies were a revelation, a perfect blend of gooey caramel and a crisp, buttery base, topped with just the right amount of salt.

However, indulging in $10 for a mere four cookies every week quickly became an unsustainable luxury. My passion for these cookies, combined with a desire for a more budget-friendly option, spurred me to embark on a mission: to recreate that magical bakery experience right in my own kitchen. After numerous attempts and adjustments, I finally cracked the code, and the results have exceeded all expectations. This recipe captures the essence of those beloved bakery cookies – the warmth, the chewiness, the decadent caramel pockets, and that essential salty finish. It’s a testament to the fact that with a little dedication, you can bring gourmet bakery quality into your home.

Crafting the Perfect Balance: Key Ingredients for Perfection

The secret to these sensational salted caramel cookies lies in a few carefully selected ingredients and a classic cookie dough base. I’ve adapted my tried-and-true chocolate chip cookie dough recipe, which consistently delivers a soft and chewy texture, and infused it with the unmistakable flavor of caramel. Here’s what makes them truly stand out:

  • Salted Caramel Baking Chips: These are the heroes of the cookie dough, scattering pockets of concentrated caramel flavor throughout. Brands like Kroger or Hershey’s offer excellent options. Their pre-made convenience ensures a consistent caramel distribution and melt beautifully into the cookie matrix.
  • Werther’s Soft Caramels: This is where the magic truly happens, creating an incredibly gooey, irresistible center. By stuffing half of a soft caramel into each cookie dough ball, you ensure a molten caramel surprise with every bite. The “soft” variety is crucial here, as it melts perfectly without becoming hard or overly chewy after baking. If you only have chewy caramels, a quick microwave warm-up before eating can soften them up.
  • Coarse Sea Salt: The crowning glory! A sprinkle of coarse sea salt (or kosher salt) immediately after the cookies emerge from the oven is non-negotiable. The heat helps it adhere, and its crystalline crunch provides a perfect counterpoint to the sweet caramel, amplifying all the flavors and delivering that coveted sweet-and-salty punch.

I must admit, despite my profound love for chocolate, these cookies make me forget all about it. The depth of flavor from the caramel, enhanced by the salt, is so utterly satisfying that chocolate simply isn’t missed. This is high praise indeed!

Why This Recipe Will Be Your New Favorite

The reception these salted caramel cookies have received has been nothing short of phenomenal. When I shared them with a few neighbors, they raved endlessly about how delicious they were, becoming instant fans. It wasn’t just polite compliments; it was genuine enthusiasm for a truly exceptional treat. And honestly, they really are that good. What makes them even better is their surprising simplicity.

While they taste like a gourmet bakery item, making them at home is almost as straightforward as baking a batch of classic chocolate chip cookies. The only additional step is unwrapping the soft caramels and cutting them in half – a small effort that yields monumental results. This minor task is absolutely worth it for the explosion of warm, gooey caramel you get in every cookie. But be warned: these cookies are notoriously addicting! It’s hard to stop at just one, so consider yourself informed before you take that first delectable bite.

Salted Caramel Cookies are soft, chewy, and full of caramel, with just the right amount of salt. This sweet and salty dessert is one recipe you'll make again and again!

Yields 36 cookies

Ingredients

  • 1 cup (226 g) butter, (2 sticks)
  • ¾ cup (150 g) granulated sugar
  • 1 cup (200 g) brown sugar, gently packed
  • 1 large egg
  • 1 Tbsp vanilla extract
  • 3 cups (360 g) all-purpose flour, (stir, spoon, & level)
  • 1 tsp salt
  • 1 tsp baking soda
  • 10-12 oz (284-340 g) salted caramel baking chips, (Kroger or Hershey’s brand)
  • 4.51 oz (128 g) bag Werther’s Soft Caramels, (18 rectangle caramels)
  • coarse sea salt or kosher salt

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Prepare your baking sheets by lining them with parchment paper or silicone baking mats.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter and both granulated and brown sugars until the mixture is light, fluffy, and well combined. This usually takes about 2-3 minutes. Add the large egg and vanilla extract, mixing thoroughly until fully incorporated. Scrape down the sides of the bowl with a spatula to ensure everything is evenly mixed.
  • In a separate medium-sized bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually add these dry ingredients to the wet butter mixture, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough cookies. Mix for no more than 1 minute.
  • Gently fold in the salted caramel baking chips. If desired, reserve a small handful of chips to press into the tops of the cookies after scooping for a prettier finish. Mix on low speed for about 30 seconds, just until the chips are evenly distributed. *If your dough seems too crumbly or dry, add 1 tablespoon of milk and mix gently until the dough comes together.
  • Scoop cookie dough balls, about 1.5-2 tablespoons each, and place them onto your prepared baking sheets, ensuring they are about 2 inches apart. You should be able to fit approximately 12 small cookies or 8 larger cookies per standard baking tray.
  • Unwrap each Werther’s Soft Caramel and cut it in half. Take one half of a caramel and gently press it into the center of each cookie dough ball until it is level with the dough. If you reserved extra baking chips, now is a great time to press a few more onto the top of each cookie for visual appeal.
  • Bake in the preheated oven at 350 degrees Fahrenheit for 8-10 minutes, or until the edges are just barely beginning to turn golden brown. The centers may still look slightly soft, but they will set as they cool. Do not overbake for the chewiest results!
  • Immediately upon removing the hot cookies from the oven, generously sprinkle the tops with coarse sea salt. Allow the cookies to cool on the baking sheet for 1 minute before carefully transferring them to a wire rack to cool completely. Store leftover cookies in an airtight container at room temperature for up to 1 week to maintain their freshness and chewiness.

Notes & Pro Tips

*For the best soft and gooey centers, always opt for Werther’s Soft Caramels. If you only have Werther’s Chewy Caramels, the cookies might be slightly tougher. In that case, warm the baked cookies for 10-15 seconds in the microwave before eating to restore some chewiness.

Measuring Flour Correctly: For accurate baking, always stir your flour in its container, then spoon it into your measuring cup, and level it off with the back of a knife. This prevents over-packing and ensures the correct consistency.

Don’t Overbake: The key to soft and chewy cookies is to remove them from the oven when the edges are just set and lightly golden, and the centers still look slightly underdone. They will continue to bake and set as they cool on the hot baking sheet.

Storage: These cookies keep wonderfully in an airtight container at room temperature for up to a week. For longer storage, they can be frozen for up to 3 months. Thaw at room temperature or gently warm in the microwave for a fresh-baked experience.

Frequently Asked Questions About Salted Caramel Cookies

How do you make the best salted caramel cookies?

The best salted caramel cookies feature a harmonious blend of ingredients. Start with a rich, buttery cookie dough base. Incorporate quality salted caramel baking chips for flavor throughout the cookie. Crucially, stuff the center with soft caramels like Werther’s for a molten, gooey surprise. Finish by sprinkling coarse flaky sea salt on top immediately after baking to provide that perfect crunch and intensify the sweet-and-salty balance.

Can you melt Werther’s caramels for baking or dipping?

Absolutely! Werther’s Original Soft Caramels are exceptionally versatile for baking and other culinary uses. You can easily cut them into smaller pieces to incorporate directly into cookie dough, bars, or other baked goods, creating delightful pockets of melted caramel. For a smooth, dippable caramel sauce, simply melt them down slowly in a saucepan with a splash of heavy cream, stirring until completely smooth and luscious. This creates a fantastic topping for ice cream, apples, or other desserts.

How do you make caramels from scratch at home?

Making soft homemade caramels is a rewarding process, typically involving simple ingredients like butter, corn syrup, granulated sugar, heavy cream, and a touch of vanilla extract. The key is to combine the ingredients (except vanilla) in a heavy-bottomed saucepan and stir continuously over medium heat. The mixture needs to cook until it reaches a specific temperature (usually around 245-250°F / 118-121°C), which corresponds to the “firm ball” stage. As it cooks, it will reduce in volume by about half and significantly thicken. Once the desired temperature is reached, remove from heat, stir in vanilla, and pour into a prepared pan to cool and set. It requires patience and consistent stirring, but the homemade results are incredibly delicious.

What makes these cookies soft and chewy?

Several factors contribute to the soft and chewy texture of these salted caramel cookies. Using both granulated and brown sugar creates a balance, with brown sugar adding moisture and chewiness. Creaming the butter and sugars sufficiently incorporates air, leading to a tender crumb. Crucially, precise flour measurement (spooned and leveled) prevents a dense, dry cookie. Lastly, avoiding over-baking is paramount; removing the cookies from the oven when the edges are just set and the centers are still slightly soft ensures they remain wonderfully chewy once cooled.

Can I make the cookie dough ahead of time?

Yes, absolutely! Cookie dough is excellent for making ahead. You can prepare the dough as instructed, then wrap it tightly in plastic wrap and refrigerate for up to 2-3 days. Chilling the dough can even enhance the flavors and texture, resulting in a richer cookie. When you’re ready to bake, let the dough sit at room temperature for about 15-20 minutes to soften slightly before scooping and proceeding with the caramel stuffing and baking steps.
