Sloppy Joe Tater Tot Casserole Recipe for a Comforting Weeknight Meal

When I launched this blog I jokingly called myself a casserole hater. After nearly two years of posting and testing recipes, I’ve discovered that was wrong—I actually love casseroles. There’s something comforting and practical about putting everything into a single dish for an easy weeknight dinner. This Sloppy Joe Tater Tot Casserole quickly became a household favorite: hearty, saucy, and simple to assemble.

I already have a more classic Tater Tot Casserole on the site made with cream soup (and it can be made in a slow cooker). We make that one often, so when I found this Sloppy Joe version on The Savvy Kitchen I knew it would be a hit—and it was. The savory, meaty sloppy joe base combined with corn, cream cheese, tater tots and melted cheddar makes a filling, family-friendly meal that feeds a crowd. Below is the adapted recipe we use. Enjoy!

Sloppy Joe Tator Tot Casserole

Ingredients

  • 1 lb lean ground beef
  • 1 red bell pepper, diced
  • 1 sweet onion, diced
  • 15 oz can corn, drained
  • 15 oz can Manwich Original Sloppy Joe Sauce
  • 2 oz cream cheese
  • 1 ½ cups shredded cheddar cheese
  • 16 oz package frozen tater tots / tater puffs

Instructions

  • Preheat oven to 450°F.
  • In a large skillet, brown the ground beef with the diced pepper and onion until the meat is cooked through. Drain excess fat and return the skillet to low heat.
  • Stir in the drained corn, sloppy joe sauce, and cream cheese. Cook gently over low heat until the cream cheese melts and the mixture is well combined.
  • Spread the sloppy joe mixture in a greased 13×9″ baking dish. Sprinkle half of the shredded cheddar over the meat.
  • Arrange the tater tots in a single layer on top of the cheese, then sprinkle with the remaining cheddar.
  • Bake 20–25 minutes, until the casserole is bubbling and the tater tots are cooked through and golden. Remove from the oven and, if desired, garnish with chopped chives. Serve hot.
