Ingredients

Raspberry Sauce:

  • 1 cup (140 g) fresh or frozen raspberries
  • ¼-½ cup (50-100 g) granulated sugar
  • 1 Tbsp cornstarch
  • 1 Tbsp lemon juice, (or water)
  • ¼ tsp almond extract, optional

Cream Cheese Filling:

  • 4 oz (113 g) cream cheese, room temperature
  • ¼ cup (50 g) granulated sugar
  • ½ tsp vanilla extract
  • 1 egg, whisked & divided (half for filling, half for egg wash)

Braid and Icing:

  • 1 loaf Rhodes White Bread (frozen dough)
  • ½ cup (60 g) powdered sugar
  • ½ Tbsp heavy cream, (or milk)
  • ¼ tsp almond or vanilla extract

Instructions

  1. Place a loaf of Rhodes frozen dough on a greased or silicone lined baking sheet covered with sprayed plastic wrap. Thaw and rise about 4-5 hours at room temperature, or overnight in the refrigerator.
  2. RASPBERRY SAUCE: In a small saucepan combine the raspberries, sugar, cornstarch, and lemon juice. Simmer on medium-low heat for about 8-10 minutes until thick, stirring occasionally. Remove from heat and stir in the almond extract, if desired. Allow to cool completely.
  3. CREAM CHEESE FILLING: In a bowl, mix together the cream cheese (at room temperature), sugar, vanilla, and HALF of a whisked egg. Save the remaining half of the whisked egg to brush the dough before baking.
  4. Preheat oven to 350 degrees Fahrenheit (175°C).
  5. BRAID: Roll out the thawed and risen bread dough into a large rectangle, approximately 12×18-inches, on a lightly floured surface. Using a pizza cutter or sharp knife, cut strips 1 1/2-inches apart on the long sides of the dough, leaving about 6-inches of uncut dough in the center for the fillings.
  6. Spread the cream cheese filling evenly in the center uncut section. Then dollop the cooled raspberry sauce on top of the cream cheese and gently spread it together.
  7. Starting from one end, pull the cut strips up and over the filling, alternating sides to create a braided (criss-cross) look. Continue until all strips are folded over. Pinch and tuck the ends of the dough as best you can to seal the filling.
  8. Gently lift and place the braid onto a parchment paper or silicone lined baking sheet. Brush the top of the braid with the remaining whisked egg (egg wash).
  9. Bake at 350 degrees Fahrenheit (175°C) for 25-30 minutes until golden brown on top and bottom. Ensure the criss-crossed dough is fully baked. Cool completely on a wire rack before icing.
  10. ICING: In a small bowl, mix together the powdered sugar, ½ Tbsp heavy cream, and the almond or vanilla extract. Add extra heavy cream 1 tsp at a time to achieve your desired drizzly consistency. Place icing in a plastic zip-top bag, cut off a small corner, and squeeze in a zig-zag pattern over the cooled raspberry breakfast braid. Cut into slices and serve.
