Smoky Raspberry Chipotle Chicken Cordon Bleu with Tangy Sauce

I love chicken cordon bleu and will happily eat it in many forms — roulade, casserole, or even in the slow cooker. It had been a while since I made this particular version, and I remembered why I love it: it’s different from any other cordon bleu you’ll try.

Chicken Cordon Bleu with Smokey Raspberry Chipotle Sauce

Ingredients

  • 3 large chicken breasts
  • 18 slices deli-thin black forest ham
  • 6 slices pepper-jack cheese
  • 1 cup raspberry preserves
  • 1 Tbsp pureed chipotle in adobo sauce
  • 2 Tbsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • ½ tsp kosher salt

Instructions

  • Slice each chicken breast in half crosswise to make six pieces. Butterfly each piece and lay it open flat.
  • Stack three slices of black forest ham and top with one slice of pepper-jack cheese. Roll the ham and cheese together and place the roll in the center of a butterflied chicken piece. Fold the chicken over to enclose the filling. Repeat with the remaining pieces.
  • Lightly grease a baking sheet. Season both sides of each prepared chicken piece with kosher salt and black pepper, then arrange them on the baking sheet.
  • Bake at 400°F (200°C) for about 20 minutes, or until the chicken is cooked through and an internal thermometer reads 165°F (74°C).
  • While the chicken bakes, make the sauce: in a small saucepan over medium-low heat, whisk together raspberry preserves, pureed chipotle, apple cider vinegar, garlic powder, onion powder, cayenne, and kosher salt. Bring to a gentle boil, then reduce heat to keep warm. Taste and adjust: the sauce should have a noticeable kick. If it’s too spicy, stir in up to 1/4 cup more preserves to mellow it.
  • When the chicken is done, drizzle the tops with the warm raspberry-chipotle sauce and serve immediately.
