- 1 ½ tsp pure lemon extract
- 5 drops yellow food coloring (optional)
- 2 cups (240 g) all-purpose flour (stir, spoon & level)
- 2 tsp baking powder
- ½ tsp salt
- ¼ cup (30 g) powdered sugar (for rolling)

In a stand mixer fitted with the paddle attachment, cream the butter, granulated sugar, and lemon zest until light and fluffy. Add the egg, egg yolk, fresh lemon juice, lemon extract, and optional yellow food coloring. Mix until combined.

In a separate bowl, whisk the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until incorporated, scraping the bowl as needed.
