This Berry Coconut Spritzer is a refreshing and easy mocktail to mix up at any holiday party!


We’ve become fans of the soda shops around here, but their drinks can be overly sweet. With the holidays approaching and plenty of treats ahead, we wanted a lighter, festive drink that still felt special. The Berry Coconut Spritzer we created is bright, bubbly and balanced—just sweet enough, with a touch of foam from cream of coconut and lively carbonation.

This mocktail is built from three simple parts: cream of coconut for richness, a quick berry reduction for real fruit flavor and color, and unsweetened, naturally flavored sparkling water for fizz without extra sugar or calories. The sparkling water keeps it light while adding the effervescence everyone loves.

We like to drop a few frozen berries into each glass for a pretty garnish and chill. For a festive rim, rub a little cream of coconut around the glass and press unsweetened coconut flakes or colored sugar crystals into it. Kids especially enjoy customizing their drinks by adjusting the amount of cream of coconut and berry reduction to their taste.

The berry reduction gives a natural holiday-red color without artificial dyes, and the sparkling water is free of artificial colors and caffeine, so it’s family-friendly and won’t keep kids up all night. It’s a favorite for holiday gatherings and an easy mocktail to serve for New Year’s Eve or any celebration.

If you want to experiment with flavors, sparkling waters come in several varieties—lime, berry, lemon and black cherry—so try different pairings. For example, cranberry juice with a splash of lime sparkling water and a touch of simple syrup would balance tart and bright notes nicely.

Ingredients
- Unsweetened Coconut Flakes or Colored Sugar Crystals, to decorate the rims of the glasses
- 12 oz (355 ml) cans of sparkling water – berry flavor
- Cream of Coconut, (not coconut milk; find it near mixers or in the international aisle)
Berry Reduction
- 1 ½ cup (210 g) frozen mixed berries, (strawberries, raspberries, blackberries, blueberries)
- ¼ cup (50 g) granulated sugar
Instructions

Simmer the frozen berries and sugar over medium heat until the mixture reduces and thickens, about 5–7 minutes. Let cool briefly, then puree in a blender or food processor and chill completely. For a smoother sauce, press through a fine mesh sieve, keeping in mind this removes seeds and a bit of volume.

Prepare the glass rims by tracing with cream of coconut and pressing into coconut flakes or sugar crystals.

In a 9 oz glass with a little ice, add 1 tablespoon cream of coconut and 1 tablespoon berry reduction. Fill with sparkling water, stir gently, and serve.
