  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (59 ml) oil (canola or vegetable)
  • 2 large eggs, room temperature
  • ⅓ cup (101 g) natural strawberry preserves or low-sugar jam, room temperature
  • 1 tsp vanilla extract
  • 1 drop red food coloring (optional)
  • ⅔ cup (159 ml) buttermilk*, room temperature
